Keto Fizzy Strawberry Italian Soda

Kids and adults will love making and drinking this fun Keto Italian soda recipe! Adults can make the strawberry syrup that forms the base flavor of the soda. Kids can fill their glasses with sparkling water and watch the soda bubble and fizz up! Italian soda is creamy, sweet, often fruity, and rich. Strawberries are one of the most Keto-friendly berries you can eat, and the syrup is sweetened with liquid stevia instead of sugar. Since heavy and whipped cream are included in the soda, it’s actually quite rich with fat for your Keto diet too. Choose your favorite flavor of sparkling water to finish assembling your soda!

Speed up the recipe time

The longest part of the recipe is cooling your syrup down before putting it in your soda. To rapidly cool down the syrup, place a small plate or dish in your freezer at the beginning of the recipe. Pour the hot syrup into the cold dish, then leave it in your freezer for about 10 minutes to cool it down. This can cut your prep time down by about 20 minutes.

    Add whole frozen strawberries to a small pot, and fill the pot with about ½” of water. Cover the pot and bring the ingredients to a simmer, then continue cooking until the strawberries are extremely soft and can be broken down with a fork or spoon. Remove the pot from the heat, add the strawberries and water to a blender, and blender until completely macerated.

    Strain the strawberry mixture to remove any seeds and pulp back into the pot you were using. Return the strawberry puree to the stove and add lemon juice and liquid stevia to the mixture. Bring the ingredients to a simmer, and let the puree simmer and reduce down into a thickened liquid syrup.

    You’ll need to transfer the syrup to the refrigerator or freezer to chill down. Smaller amounts of syrup may only take about 30 minutes to chill down. Once the syrup is cooled, you will make one soda by adding one tablespoon of syrup to the bottom of a glass. Pour one tablespoon of heavy cream into the syrup, and stir the ingredients together.

    Gently pour 6-8 fluid ounces of plain sparkling water into your glass, careful not to let the fizzy bubbles pour out and make a mess. Once the bubbles have settled, add about 2 tablespoons of plain whipped cream on top of the soda before piercing through it with a straw. If your syrup is too thick, you can gently stir the soda together to mix up the syrup more.
