  • Step 1

    Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow oven tray.
  • Step 2

    Add the almonds to a small mixing bowl along with crushed pecans. Finely chop the rosemary and add to the bowl along with the salt and pepper. Stir well to combine.

    Add the olive oil, lakanto syrup and mustard to a small mixing bowl and whisk together until smooth.

    Liberally coat four small salmon fillets with the maple dressing.

    Sprinkle the crushed nut mixture over the salmon fillets, coating each.

    Transfer to the oven to bake for 10 minutes or until the salmon is cooked through and flakes easily with a fork.

    This was phenomenal. And so much easier than I thought!! Enjoyed 2 filets with cauliflower rice. Sooo good. Also cooked 15 mins.

      I am not a big fan of salmon and my partner wanted me to try this recipe. Delicious. Did mine for 15 minutes in the oven. Will definitely have this again.

        Love this recipe! This is going into regular rotation. I did find that the cook time was not sufficient. Added 15 minutes and it was cooked all the way.

                  Very tasty! I substituted lemon pepper for rosemary (I am not a rosemary fan). Cooked in AF for 23 minutes…. Not quite done at 18 minutes. Delicious! Thanks for the recipe!

                            Delicious! Only change in recipe was I substituted dill for the rosemary (I didn't have it ). Also I cooked in the air fryer rather than the oven. 1st time I used the AF for salmon. It came out incredibly moist. 400 degrees for 18 mins. Yes, I know it was longer but I didn't want to heat up my house with the oven
