  • Prosciutto

  • Sundried Tomatoes

  • Pine Nuts

    Pine Nuts

    1 tablespoon, whole pieces

  • Olive Oil

    Olive Oil

    1 tablespoon

  • Garlic

    ½ clove

  • Basil

    Basil

    ⅓ cup, chopped

  • Step 1

    Preheat the oven to 360 degrees Fahrenheit and select a muffin tray.

    Arrange each slice of prosciutto in a muffin cup so that it covers the base and sides, forming a cup shape.

    To prepare the pesto, add the basil, garlic, Parmesan and olive oil to a food processor and blend to combine.

    Add half of the pine nuts and blend again until they are finely chopped.

    Add a tablespoon of mozzarella to each prosciutto cup.

    Roughly chop the sundried tomatoes and divide between the prosciutto cups.

    Drizzle each cup with pesto.

    Transfer to the oven to bake for 10 minutes or until the cheese is melted and the prosciutto is crisp.

    Set aside to cool and crisp further before serving.

    It tasted really good (even the picky kids liked it), but was extremely salty. Is that the prosciutto, pesto, or both?
