Keto Sweet and Salty Mushrooms

These quick and easy Keto mushrooms are simple to prepare and packed with flavor. Our low carb mushrooms are pan-fried on the stove until just tender, then tossed with a flavorful marinade of tomato paste, sesame oil, sweet syrup, tamari sauce, and a hint of lime. The mushrooms are then topped with fresh chopped cilantro and scallions to serve. These make a great Keto side to accompany low carb Asian inspired meals.

What Kind of Mushrooms Should I Use?

We have used sliced cremini mushrooms for our easy Keto side. You could also use white button mushrooms if preferred. We have thickly sliced our mushrooms for this Keto recipe to retain texture and bite, so feel free to use any firm, thickly sliced mushrooms you desire. Please be sure to adjust your macros and cooking time if needed to account for any changes made to the recipe.

Serving Suggestions

We love our Keto mushrooms served alongside Asian inspired low carb meals. Perfect with Keto egg fried rice and some sweet and sour chicken. You could also use these mushrooms as an alternative topping for steaks or grilled pork chops, served with a side of sautéed green beans.

    Add the tomato paste, sesame oil, tamari, lakanto, lime juice and olive oil to a small bowl. Whisk to combine until smooth. You may adjust the seasonings as desired to taste. You may also use an alternative low carb sweetener if preferred.

    Thickly slice the mushrooms. Heat the olive oil in a skillet over a medium heat. Add the sliced mushrooms and pan fry until browned all over.

    Add the prepared sauce mixture to the skillet. Stir well to combine, coating the mushrooms evenly in the sauce. Cook for a few minutes more until the sauce has reduced right down to a glaze and the mushrooms are hot through.

    Roughly chop the scallions and cilantro. Scatter over the cooked mushrooms. Serve warm with your preferred Keto mains.
