  • Step 1

    Prepare the mushrooms by removing the stalks and thinly slicing the caps. Next, lay out two 8-oz. chicken breasts on a clean surface. Use a sharp knife to slice across the breasts without cutting them all the way through, as pictured.

    Fill the slices with the mushrooms, Then, sprinkle the salt and pepper over the breasts.

    Melt the butter in a skillet over medium heat. Place in the breasts, mushroom side up. Cover the skillet with a lid and cook them for up to 15 minutes, or until an internal thermometer reads 170 degrees. You can lower the heat if needed to avoid burning the chicken.

    Transfer the cooked chicken breasts to the side to rest. Leave any juices in your skillet. Return the skillet to medium low heat. Mince the garlic and toss it into the skillet to become fragrant.

    Next, stir in the vinegar. Stir until the fats and liquids emulsify. Then, stir in the heavy cream and black pepper. Bring the liquid to a low simmer.

    Turn the stove heat as low as possible, and stir in the first amount of mozzarella cheese. This is just enough to bring the sauce together.
  • Step 7

    For serving, pour the marsala over your hasselback chicken. Top off the breasts with the final amount of shredded mozzarella cheese. Enjoy hot and melty!

      I love Marsala anything.... how can this be Marsala without any Marsala in it? I'll try it but disappointed no Marsala.

        Agree it's a weird name for this dish. If I ever make it I will replace the vinegar with white wine even for the extra carbs to give it a quality flavor since Marsala wine is too sweet for Keto

      Followed the recipe to a T and it ended up too white wine vinegary to eat! Checked recipe again after 1 bite and I didn’t miss/ mess up a thing. Very disappointed

            Didn't really like the sound of this chicken, mushroom and a white sauce but OMG it was amazing highly recommend very easy to do aswell.

                      Hands down the best chicken dish I have made! I made it exactly like it was posted. Family loved it! This tasted like something you would get at an upscale restaurant! I made a side of toasted Brussels sprouts with it.

                        Loved this recipe! Super easy and fast! I used 3 breasts, and had delicious sauce left over for the third breast for my husbands dinner tonight. For his dinner tonight (he’s not on Keto) I will dice up the chicken breast and serve it over pasta adding diced zucchini and fresh cherry tomatoes.

                          I sliced up the chicken breast and cooked it instead of the recipe way. The sauce was amazing...I have some left over chicken. I WILL be making this again very soon!!!

                                  So good! I had room for an another couple of carbs so instead of vinegar, I used a dry white wine and a tsp of brandy and OMG the sauce was to die for. It's alot of chicken plus the mushrooms make it super filling and the sauce is total comfort food. Yum!

                                      How can you make a Marsala sauce without Marsala wine, which contains sugar?

                                        Hi there, For the sake of keeping keto, this recipe is an interpretation of Marsala chicken. The sauce made in this recipe does not use Marsala wine, but uses white wine vinegar instead. If you still don't want to use that, I would suggest substituting with white vinegar or balsamic vinegar, depending on your personal taste. Hope this helps!

                                      Delicious! I followed other suggestions an added thyme and rosemary to the sauce. So creamy and great flavored. Paired it with sautés Kale and it was so good.

                                          Hi there, Yes, it is okay to enjoy a dish that has more protein than fat. However, overall, you do want your daily fat macro to stay around 70% of your total macros in the keto diet. By logging your meals in Carb Manager, you should be able to monitor your macros and enjoy your meals. Hope this helps!
