Keto Italian Mozzarella Sticks with Marinara

These are so delicious, crispy and melty! I love how the cheese melts and turns into a giant string when you bite into these mozzarella sticks. These sticks use the light cheese sticks as I found they hold up better during the cooking process. They are breaded and then frozen solid so they can withstand the cooking process (so do not skip the freezing step!) Serve them with marinara sauce if you are on a low carb diet or eat them plain if you are on keto! They are delicious either way.

  • Raw Egg

  • Water

  • Marinara Sauce

  • Step 1

    Prepare a baking sheet by lining it with parchment paper. Cut cheese sticks in half to make 24 pieces.

    In a medium bowl, combine the almond flour, Italian seasoning, salt and garlic powder together.

    In another bowl, combine the egg and water and beat until well mixed.

    Dip each breadstick into the flour mixture, then the egg mixture and then back into the flour mixture. I like to use a separate fork for each one to prevent cakey fingers!

    Line the sticks onto the parchment paper not touching and freeze them for at least one hour or until ready to heat.

    Heat some avocado oil in a small saucepan until hot about 350 F oil. Add the sticks to brown them on all sides then place them back unto the parchment lined baking sheet and bake them in a 350 F oven for 5-10 until they become soft but not melting out. Serve hot with marinara sauce, if desired!

    Could you use ground pork rinds instead of the almond flour?

      I've made something similar using crushed pork rinds and yes they turned out amazing.

    Totally filled my Superbowl craving for melty cheese with something Crunchy and saved me from going off the cliff stuffing my face with the Costco version i was making for my party. I was so anxious to make these I put them in the oven and then realized I was supposed to fry first, so I baked then fried and the things got pretty melted out but the coating stayed on and they were still delicious. Also a note that I sub'd coconut flour and a couple tablespoons of ground walnuts and pecans for the almond flour. Probably changes up the macros a little bit.

        I accidentally left the cheese sticks in the freezer for 2 days. Didn't matter, they were amazing!
