  • Step 1

    Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  • Step 2

    Mince the garlic and add to a small mixing bowl along with 1.5 tablespoons of olive oil and the paprika. Stir well to combine.

    Arrange the kale across the lined oven tray and drizzle over the oil mixture. Use your hands to massage the oil into the kale. Season with salt and pepper.

    Transfer to the oven to bake for 10 minutes until crisp.

    Whilst the kale is cooking, heat a tablespoon of olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking through until crisp and golden.

    Add the kale to a large bowl and toss with the crispy bacon to serve.

    Worked great. A little spicy, so I will reduce the paprika to 1tbs for the next time. I served it with two fried eggs on top for a very satisfying breakfast.

        Collard greens might work.

        Spinach probably wouldn't "stand up" to this recipe kale being a "sturdier" leafy vegetable.
