This simple but tasty kale is oven baked with garlic, paprika and olive oil until crisp and tossed with salty bacon.

Ingredients
Kale
4 cup
Bacon
4 slice - 6" long
Olive Oil
2-½ tablespoon
Gourmet Collection Smoked Paprika by Mccormick
2 tsp
Garlic
1 clove
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.Step 2
Mince the garlic and add to a small mixing bowl along with 1.5 tablespoons of olive oil and the paprika. Stir well to combine.Step 3
Arrange the kale across the lined oven tray and drizzle over the oil mixture. Use your hands to massage the oil into the kale. Season with salt and pepper.Step 4
Transfer to the oven to bake for 10 minutes until crisp.Step 5
Whilst the kale is cooking, heat a tablespoon of olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking through until crisp and golden.Step 6
Add the kale to a large bowl and toss with the crispy bacon to serve.

Worked great. A little spicy, so I will reduce the paprika to 1tbs for the next time. I served it with two fried eggs on top for a very satisfying breakfast.

Collard greens might work.

Spinach probably wouldn't "stand up" to this recipe kale being a "sturdier" leafy vegetable.
