Turkey burgers are so delicious! They taste excellent when topped with fresh veggies, like spinach and peppers. Cheddar cheese also happens to complement lean turkey very well. We took a burger and turned it into a casserole, so you can enjoy all the flavor minus the bun.

  • Red Bell Peppers, Raw

  • Cheddar Cheese

    ⅓ cup, shredded

  • Step 1

    Heat a large skillet on high heat. Place in the ground turkey with salt, pepper, onion powder, and paprika.

    Cook the ground turkey until browned and much of the liquid evaporated. Discard of any remaining liquid when done.

    Preheat an oven to 350 degrees and prepare an 8x10 baking dish with pan spray. Chop and arrange the cauliflower at the bottom of the dish. Drizzle the olive oil across the cauliflower.

    Transfer half of the cooked turkey into the baking dish and spread it over the cauliflower. Sprinkle the first amount of cheddar cheese over the turkey as well.

    Next, create a layer of spinach. Then, chop and distribute the red bell pepper over the spinach.

    Finally, spread the remaining ground turkey on the top of the baking dish. Sprinkle the final amount of cheese over the turkey too,

    Bake the casserole, uncovered, for 30 minutes until the cheese is golden brown.

    Slice into 6 slices for serving!

    This is one of my favorite go to recipes for easy weeknight dinners. I love it! Tonight, I forgot to get cauliflower, so I sliced up a zucchini in place of the cauliflower. Still turned out great! I also use smoked paprika instead of regular and add garlic powder.

      Amazing. i did cook the cauliflour in the baking sheet alone for 20 minutes to soften it up. Added creme cheese before the rest of toppings.

        Colorful and delicious. I added 6 oz. Cream cheese and mushrooms. Loved it! Leftovers are great also.

          So yummy! Like another reviewer said, I added 1 full block of cream cheese, heavy cream, and mushrooms to the turkey burger. I also added the siracha to the turkey burger to give it a bit of a punch. Instead of the whole cauliflower, I used riced cauliflower. It all turned out so good. Super yummy!

            Delicious! After reading reviews I added half a block of cream cheese to the ground turkey once cooked, to give the dish a bit more moisture. Hit the spot. Fam loved it.

              Made this exactly as written and turned out really well. Was a little skeptical about the fresh cauliflower thinking the pieces might be undercooked but they turned out perfectly cooked, tender and sweet tasting.

                After reading the reviews, I cooked the turkey in a little olive oil and replaced the cauliflower with sliced zucchini. I also added garlic powder. It came out really good but I do think it would benefit from some cayenne or maybe jalapeños. Then again, I am from Louisiana and we like our spice. 😀

                  This was on my meal plan for tonight, but it's my birthday. My mom was visiting, so she made dinner, followed the recipe, and it was excellent. Will definitely be making this in the future.

                  We decided to make the casserole without the cauliflower. We put the casserole on top of cauliflower rice and added salsa and a touch of sour cream to make it more flavorful. Would make it again.

                  Tasty and fresh! You’d think ground turkey, bland cauliflower, and spinach would be so ho-hum. But not so! I roasted the cauliflower with a bit of olive oil, salt, and pepper before adding it to the baking dish, but followed the recipe after that. Even my husband liked it and had seconds. :)

                        Very dry good flavor. Did sides of avocado and some sour cream to provide some moisture. Might try roasting the cauliflower first just to get it more flavor.

                              So I did not have spinach so I subbed it for zucchini and I used green peppers instead of the other ones in called for. I also added 2 oz of cream cheese and dolloped it in random places on top. OMGGGGG so good. 1 0z cream cheese is 97 calories X2 and then 166g of zucchini is 30 cal. THe spinach amount was 7 cal total so just adjust and you have the recipe :)

                                  I made this tonight for the 3rd time. It's easy and delicious. Even my Mom, who hates vegetables that aren't covered in cheese sauce, loved this!

                                    I love the ease and versatility of this recipe! I used ground beef, frozen cauliflower, frozen 3 pepper and onion blend. I took advice from some of the other reviews and added a can of chunky portobellos and a block of cream cheese after I cooked the meat. I added about 1/2cup of water to thin it out. I steamed cauliflower then layered it in a casserole dish,sprinkled it with cheddar and then poured the meat mixture over it and topped with the remaining cheese. It's a keeper and thanks for sharing. Also,I finished it with sriracha. So many possibilities with this

                                      I had lean ground beef on hand. Was very tasty. My nonketo family loved it. I finished the dish with some sriracha.

                                          Would not make again ... was very dry. I would suggest pre cooking cailiflower and add some fat when cooking meat. Maybe olive oil?

                                                  This is so warm and yummy! My 4 year old loves it. It's a meal we have in constant rotation. Easy to prep and cook later. Warms up great.

                                                      Super good! I added fine chopped onion and Bella baby mushrooms to cooking the turkey before I layered it and added some nice flavors. Making again for sure!
