  • Step 1

    Preheat an oven to 375 degrees and lightly spray and 9X13 glass baking dish. In a microwave safe bowl, heat the cream cheese for 15-20 seconds, until it’s warm and pliable. Stir in the garlic and chopped chives. Set this mixture aside to set slightly.

    Prepare 4 chicken thighs by unraveling them and laying them open on a flat surface. Sprinkle a pinch of salt and pepper each over each chicken thigh.

    Use a fork or spoon to smear a portion of cream cheese mixture over each chicken thigh, as pictured.

    Gently bring the far ends of each chicken thigh together in the center, and flip each chicken thigh over so they rest on the seam you just created. Brush a ¼ teaspoon of olive oil over the bare tops of each chicken thigh. Then, roll the chicken thighs in shredded parmesan, so each thigh is covered in about 2 teaspoons of parmesan. You can lightly press the parmesan into the chicken if any does not stick. Place each chicken thigh in your prepared pan, with the closed seam on the bottom.

    Bake the dish for 40-45 minutes - enough time for the parmesan to melt and give a golden brown top to the chicken. Enjoy!

        Delicious! The whole family loved it. Glad I doubled it. I added bacon to a few pieces and covered with provolone for a variation on half. The original was delish without the modifications.

              These are definitely worth the time. Easy to adjust for more chicken thighs if you want leftovers. I’ve wrapped several in bacon and it turns out amazing! I try to cook the bacon in the oven for a short bit so it has a head start. So good

                    Have done this for years...pre-Keto...even better...wrap 2 slices of bacon around each of them...so yummy

                      Easy to make and very good. I added fresh spinach to the cream cheese mix before spreading (I love spinach) and cooking. I plan on making this again due to its ease and being easy to reheat!
