Keto Buffalo Chicken Bites
Buffalo flavoring at its simplest: seasoned chicken breast cubes coated and cooked in classic Frank’s Hot Sauce. You may also use an alternative similar wing sauce or vinegar-based hot sauce. A little crumbled blue cheese finishes these bites off for a tangy and cooling finish.

Chicken breast, skin removed before cooking

Salt

Black Pepper, Ground

Onion Powder

Garlic, Powder

Step 1
Cut the chicken breast into 1-inch cubes, approx. 20. Whatever amount you get, make sure it’s an even number. Toss the chicken cubes in a small bowl with the salt, pepper, onion powder, and garlic powder until the chicken holds all the spices.Step 2
Heat the olive oil in a pan over medium heat. Place each piece of chicken one by one in the hot oil. Cook the chicken for about 4 minutes before flipping over and cook an additional 3-4. You may need to gently rotate the chicken to cook on extra sides if you see any pink.Step 3
Turn the stove heat down to low and pour the hot sauce into the pan. Toss the chicken in the pan until it’s all coated in the sauce. Let the chicken cook on low, occasionally rotating, for another 1-2 minutes. Let the chicken cubes cool for another couple minutes off the stove before continuing onto the next step.Step 4
To assemble the bites, stick 1 toothpick into 2 pieces of buffalo chicken at a time, until all the chicken is assembled. Choose about 10 large blue cheese crumbles or cubes and press them on top of the chicken over the toothpicks. Garnish each bite with an additional dash of hot sauce.

One of my favorites! I like to just eat them in a bowl with a little sour cream. We also use more spices and add siracha seasoning.
