  • Step 1

    Preheat an oven to 375 degrees. Prep a large sheet pan by spraying it and spreading the first amount of oil across it. Slice the kielbasa into thin rounds and arrange them in the center of the pan.

    Chop the zucchini and broccoli. In a bowl, combine the veggies with the second amount of olive oil, salt, pepper, and italian seasoning.

    Spread the veggies around the sausage in the sheet pan. Crush and place two garlic cloves in the vegetables.

    Bake the sheet pan for about 35 minutes, lightly tossing the vegetables half way through. You can enjoy hot or spread out in 3 meal prep containers.

    I keep burning this dish! I love it but I think the cooking time is too long. Watch your food the second time the last 5 min at least.

      I found that if you cut everything about 1/2” thick helps. Also since different ovens heat differently. You can also start at a lower temp. Put on a higher shelf in oven too. Check every ten minutes too.

    So quick and easy! If you like a crisper zuccchini, i suggest thick slices so it all cooks together perfectly.

      Back again for a fast dinner, this time with brauts, broccoli, and tiny tomatoes. Will have to redo the macros, but I used what I had on hand in the time allotted. I'm sure it will be scrumptious. 👍

          This recipe was so simple and very good. I used the lowest carb polish sausage I could find and the recipe ended up with a little over 4 carbs per serving. The flavors were great and although I thought there was way too little broccoli, it ended up being the right amount. I ate two servings. Yum!! Thanks so much.

            Good flavor simple but cook time is too long and the whole pan only measured 10 oz and 1 serving is supposed to be 5 oz so how is it 3 servings added Parmesan cheese as someone suggested

                  This was so easy. I just put the whole pan on the table and people served themselves. Made some of the Carb Manager cheese sauce for the kids to put on the broccoli. The broccoli was better than the zucchini, so I might use some carrots and cauliflower next time instead. We had no leftovers.

                      The only sugar/nitrate free Polish Sausage I've found is Boar's Head. Surprisingly, no loss of flavor.

                          Tieton’s makes a sugar- and nitrate-free polish sausage. I also like the sugar-free chicken sausages from Trader Joe’s. And housemade Italian sausages from Whole Foods!

                            A california medley (broccoli, cauliflower, and carrots) is a perfectly good substitute for the vegetables in this meal prep.

                                  I do this all the time but modify by creating foil bags and putting everything in the bag (along with olive oil) and bake together at once. The heat and oils of the kielbasa make the veggies cook perfectly! I also add asparagus, brussel sprouts and onion. In the summer I do the bags on the grill and this gives everything a little char. This has become my go to comfort food!
