  • Step 1

    Heat a tablespoon of oil in a large pan or skillet over a medium /high heat. Season the chicken thighs and add to the pan. Cook the thighs until well browned all over. Remove the thighs from the pan and set aside.

    Heat the remaining oil in the same pan over a low heat. Finely slice the onion and add to the pan, sweating until tender. Finely slice the garlic and finely chop the rosemary. Add to the pan and cook gently until tender and fragrant.

    Add the stock to the pan and bring to a boil then reduce to a simmer.

    Slice the artichokes across into strips and slice the baby zucchini lengthways, removing the tips. Return the chicken to the pan along with the artichokes, zucchini and olives. Simmer for a further 5-10 minutes or until the chicken is completely cooked through, the zucchini is tender, and the stock has reduced.

    Didn’t have marinated artichokes, just the kind packed in water. But, I did have a jar of marinated Greek olive medley. Used that marinade instead. Very flavorful. Good enough for company.

      The problem with many of these recipes is that the portion size is ridiculously small. Why? Because you really still need to keep an eye on calorie intake in order to lose weight and when you are pushing high protein and high fat, that can cause a difficulty as high fat is always high calorie. Two thighs here means over 600 calories! The recipe itself is very tasty.

          This is the first recipe I have tried from this site. I am so impressed! My mom loved it too; I didn't tell her it was on my diet. I did add some lemon juice, only because I like lemon and rosemary on chicken. Delish!

            Everyone loved it! I add some heavy cream and serve it with paste for the non-keto of the family. It was really good.

            I made this tonight. I loved it and it was delicious. I agree with moon drake about the portion size. I had 4 chix thighs. I weighed before I cooked I think about 5 oz each thigh. I ate 1.5 thighs and it filled me up. I did not weigh after I cooked. I’ll weigh tomorrow before I eat for dinner. Wanted to do that tonight but wanted to eat. I just joined yesterday and I’m really loving this app a lot. I really offers a lot with the recipes the way they’re displayed and, all the macro info it’s awesome. Everything in one place.🤗

              This was so delicious! I needed to eat two thighs to be satisfied but very good, also I did leave the skin on bc I love the skin so much! Easy to cook and delicious!!!!

                  For Keto there is no good reason to remove the skin! I wish they hadn't done that because now it's hard for me to calculate the macros- I'm not removing skin.

                    Copy the recipe into My Foods. Then you can edit the recipe to include thighs with skin. Macros will be adjusted automatically. I do this often when toying with a recipe.

                  Looks good but portion size is awfully small. 2.5oz raw weight (so maybe 2oz cooked weight) of chicken per serving doesn't seem sufficient for a meal.

                    Unfortunately, that would not for me - I be honest - I can't do cauliflower rice. Don't like the taste, texture or smell. Will try with "noodles" like zucchini.
