Recipe Steps

  • Step 1

    Heat one tablespoon of olive oil in a large pan over a medium/high heat. Dice the sausages into one inch chunks and add to the pan frying until browned all over. Set aside.

    Heat another tablespoon of olive oil in the same pan. Dice the chicken thighs into two inch chunks, add to the pan and cook until brown all over. Set aside.

    Heat the remaining olive oil in the pan. Finely dice the celery and slice the green pepper into thin strips. Add all to the pan and saute until tender.

    Add the paprika, cayenne pepper, oregano, garlic powder and tomato puree to the pan. Stir well to combine.

    Add the stock to the pan and stir to combine.

    Return the chicken and sausage pieces to the pan. Season and simmer for 15-20 minutes until the sauce has reduced by half.

    Add the cauliflower rice to the pan and continue to simmer for a further 10 minutes until the stock has been absorbed completely.

    Scatter with chopped scallions to serve.

    Used chicken andouille sausage and bone in, skin on chicken thighs. Reduced the cayenne pepper to 1/2 tsp and the broth to 2 cups. Didn’t have tomato purée, so used keto catsup. Turned out very, very tasty. Served over cheese cauliflower rice

            Try roasting cauliflower rice in oven (375 10-20 min) with a little olive oil and spices. It draws some water out and improves texture exponentially.

              If you make the recipe be sure to reduce the stock by 1/2 it will turn out much better and not so liquid. Tastes great either way, but I like it more like jambalaya then soup.

              The riced cauliflower made it more watery than I like, but the taste was pretty good.

              Delicious! I used a whole sachet of tomato paste, added a few stevia drops and a large teaspoon of liquid smoke. The best jambalaya I've ever made!

              It was a very nice dish! I made a following changes, mainly because I was lacking the ingredients: omitted green pepper, substituted paprika for smoke paprika and adding a few drops of liquid smoke, omitted the cauliflower rice, substituted shallot for the scallions. Then insimmered it for 20 mins to reduce the sauce little more. It was delish 👌🏻
