Low Carb Avocado Cucumber Bites

Stay cool as a cucumber with these cucumber bites! Each bite is filled with a creamy mixture of avocado and ricotta cheese. A little protein rounds out this snack. To keep things interesting, you are welcome to experiment at your discretion by swapping out the salami in this recipe for other sources of protein - white meat turkey, crispy bacon, or chopped hard-boiled egg are all good choices!

Ingredients

  • Hass Avocado

  • Ricotta Cheese

    Ricotta Cheese

    1 teaspoon, whole pieces

    1-¼ ounce

  • Cucumber

    Cucumber

    ½ large - 8 1/4" long

  • Step 1

    Remove the avocado from its skin into a bowl. Use the back of a fork to mash the avocado, and combine the ricotta cheese with it.

    Stir the salt and dill into the mixture. Finely chop the salami. Set aside some of the salami as a garnish for later and mix the remainder into the avocado filling.

    Prepare a whole cucumber by slicing it in half lengthwise. Wrap and set aside one half of the cucumber for another recipe. Lay down the remaining half on a clean surface, and use a knife or spoon to remove the seeds and core of the cucumber. Make sure the space created is hollow enough to hold the filling - there will be a lot!

    Spoon the filling into the cored cucumber half. Pack in the filling to avoid a mess. Some filling may rise over the edge of the cucumber, but this is okay.

    Slice the cucumber into 10 pieces. Top each piece off with the bits of salami that were set aside previously. Enjoy!

    Tried this and substituted somethings, used cottage cheese in place ricotta, pepperoni in place of salami and garlic salt but omitted dill. I made this as a dip and peeled my cucumber and cut into slices. I liked this very much.

      This recipe was a bit disappointing. You should DEF skin the cucumber well before you stuff it otherwise it leaves a nasty after taste. The stuffing wasn’t all that flavorful and because I used real ricotta cheese from the block and not the liquid-ie stuff in a plastic container, it was too thick and dry. Do not use the high quality ricotta! It was also messy. Won’t be making this again.

        Ricotta salata and ricotta are two entirely different ingredients. I do not understand why you think that salata is a more real cheese. They are two different preparations of the same cheese, one being fresh and the other being aged and thus dried/dehydrated. If a recipe calls for ricotta cheese, it means the softer more liquidy one. If they want the hard one, they will specifically ask for ricotta salata.

      We can’t eat pork in our household so i’m substituting the salami for lox! I think it will pair well— kind of like the ingredients in a sushi roll!

        Have not tried this, but I will with some modification. I haven't liked any of the dishes where the cucumber gets scooped out, as they tend towards messiness. I may try just peeling and slicing or a small bit of chopping. I don't much like ricotta, so I'll figure out something to replace that cheese. It'll be more of a snack salad. This could work really well. Any thoughts on ricotta substitute?

          I tried it with Whipped Cream Cheese Spread instead of ricotta and bacon bits instead of salami.. pretty good & easy!

        I did NOT enjoy these at all. The first time I tried was okay but by the second time the flavors combined with the ricotta texture nauseated me. Some people love ricotta so they would love this. Aside from the taste, this did not keep well as a meal prep (for me) and was pretty difficult to travel with. I could not jump on this train. One star for me.

          Agreed. Avocado doesn’t keep well at all, so I assumed it wasn’t a make ahead meal, which is probably why you liked it the first time, if you ate it right away, instead of the second time after letting it sit before eating.

          I disagree with pmckee. I found this helpful. This review stresses if you aren't a big fan of ricotta cheese than you may not enjoy this mixture. There is also a statement about meal prep didn't keep well. Thank you for your review. This was helpful for me.

          Very tasty! Next time I'll peel the cucumber first or use an English cucumber. The peeling was unpleasantly tough.

              Very good! Kids loved it. My son is not a huge cucumber fan so he ended up eating it like a dip and used parmesan crisps as the “cracker”
