I love meals you can sit and forget because it allows me to focus on other parts of the meal and is hard to ruin. I use frozen fish, if you do this be sure they are fully thawed which is easy to do. I simply place them in a bowl of cool water and if I am in a hurry I let the faucet water drip into the bowl to keep the water moving and helps thaw the fish faster. In the meantime, I melt salted butter, take it off the heat and add fresh chopped basil to the mix and pour it over the fish and bake.

  • Butter, Salted

  • Apple Cider Vinegar

    1-½ teaspoon

  • Step 1

    Preheat an oven to 425 F. If using frozen cod that is presealed, place cod in a cold water in a large bowl and let water trickle on the cod until completely thawed.

    In the meantime, in a small saucepan, melt the butter. Remove from the heat and add the basil, salt, pepper and vinegar.

    Place fish in an oven safe baking dish and pour butter on top.

    Bake for 15-17 minutes until the fish reaches 145 F. Serve immediately!

    Meh. I wasn't at all moved by this one. 🤷🏻‍♀️ I'll start by saying I'm not a huge fan of fish but I like to mix it into my meal planning periodically because it's good for me. Based on rave reviews and the fact that I really like basil I thought this recipe was a good way to do that, but sadly not so. I used frozen Pacific cod (Amazon Fresh brand) and followed the recipe except for using rice vinegar because I didn't have apple cider vinegar on hand. I didn't throw it away but I had to use tartar sauce the second night to make myself eat it.

      I love this recipe. It's so simple and fast. I keep frozen pieces of cod in my freezer and they thaw very quickly. It's delicious even when I need to switch up to a different type of vinegar!

        This is one of my favorite fish recipes from CM. I used Orange Roughy because so many of the dishes here call for cod. Worked beautiful. It's simple, quick, easy to make and really hard to screw up. Plus, there are so many fish this works with; cod, tilapia, whitefish, sole, halibut, flounder are but a few.

          Simple and tastes fabulous. The apple cider makes the basil sweet. It's worth it to get fresh basil!

            This was very tender and an easy meal. I salted the fish about 15 minutes prior to putting it into the oven, and I think that brought out the freshness of the cod.

                Orange roughly and swai or fresh trout are all light options that aren't fishy in flavor.

                Omg. Tried this for the first time tonight. I will admit I was a little skeptical especially when everything came out (liquid) green. But once I tried it I had to slow myself up. Think this is the only way I want my cod from now on

                                    Hello! The keto roasted "potatoes" would be a great one. As would, roasted Brussel sprouts or roasted asparagus! My personal favorite is the soy sauce bok choy you can find in this app as well.
