  • Step 1

Pat dry the meat and vegetables. Cut everything into bite-sized pieces. Add to a large bowl.
    Step 1
  • Step 2

Drizzle olive oil over everything and season with herbs and spices. Toss well to combine, making sure to coat each piece. Refrigerate for 40 minutes.
    Step 2
  • Step 3

Remove the mixture from the refrigerator and transfer to a large colander. Drain the excess marinade for about 5 minutes. This step is very important because you don't want too much oil in your foil packets.
    Step 3
  • Step 4

Place ¼ of the mixture on a piece of heavy-duty foil and add ¼ of the sliced and chopped bacon. Fold and seal the foil tightly. Repeat with the remaining mixture.
    Step 4
  • Step 5

Preheat the air fryer to 400°F (200°C). Add the prepared foil packets to the basket. Depending on the size of your air fryer, you will probably have to cook these in several batches. Cook for 30 minutes.
    Step 5
  • Step 6

When done, remove the foil packets from the air fryer basket. Carefully, open the foil packets and serve immediately. Optionally, garnish with some lemon slices and fresh parsley.
