This is super simple to put together, but it is so creamy and delicious! I love the coconut cream whipped in with almond butter to create this light, pillowy dessert that can be eaten as is, piled on top of berries, as a frosting on a keto-friendly cake or even on top of coffee. Be sure not to shake the can of coconut cream so the cream stays separated from the water. Carefully scoop the cream off leaving the water at the bottom of the can. Also be sure to buy coconut cream, not coconut milk in a can.

  • Step 1

    Skim the coconut cream off the top of a can of coconut cream, leaving the water portion in the bottom of the can. Place the coconut cream in a bowl.

    Add to the bowl, the almond butter and Swerve as well as a pinch of sea salt.

    Whip together with a hand mixer until well blended. Serve any way you’d like.

    Top with a little cinnamon if desired!

    OMG this sure doesn't taste like diet food. This was a decadent treat I will definitely make again. I did mine in a stand mixer which made it super easy. Thank you for this delight. I used the water at the bottom of the can to make coconut cauliflower rice which was also delicious you could also use that water to make coconut curry chicken or the like.

            I’ve made this a couple of times and I can’t seem to get it right. I’m not sure what I’m doing wrong, but I’m not getting the “whipped” texture that’s in the pictures. I made sure to only use the cream portion of the coconut cream and left the water on the bottom of the can. Any suggestions?

              Use coconut cream that has been refrigerated!

            This was pretty simple to make. As for me it’s fat overload. I think it tastes great but I could only eat a tablespoon . It is to rich for me . I’m not sure how to store it. The coconut cream will harden when refrigerated. Can it be microwaved?

              I would recommend leaving it at room temperature before eating it and giving it a good stir prior to eating after refrigeration!
