Ingredients

  • Boneless Skinless Chicken Breast

    2 medium slice - 4 1/4" x 4 1/4" x 1/16" - each 0.75 ounce

  • Swiss Cheese

    Swiss Cheese

    2-¼ ounce

  • Bacon

    Bacon

    6 slice - 6" long

  • Olive Oil

    Olive Oil

    2 teaspoon

  • Parmesan Cheese

    Parmesan Cheese

    ¼ cup, shredded

  • Parsley, Fresh

    Parsley, Fresh

    1 tablespoon, chopped

  • Step 1

    Butterfly two chicken breasts and pound them to a ½-inch thickness. Sprinkle the salt and pepper across the exposed chicken.

    Lay down a slice of ham over each chicken breast, and arrange the swiss cheese evenly as shown.

    Fold the chicken breasts back together and wrap each one in bacon - about three slices per breast. Make sure the ends of the bacon strips are folded under the chicken so they stay secure.

    Drizzle the olive oil in a large skillet, and heat it to medium-high heat. Place the wrapped chicken breasts down, and cover the skillet with a lid. Cook the chicken on each side for approx. 5 minutes per side or until the chicken is completely cooked through.

    Sprinkle the parmesan cheese across the tops of the cooked chicken and cover the skillet with the lid again, allowing the cheese to melt for about 30 seconds before serving.

    This one is great. I was a little disappointed with how much cheese came out while cooking on stovetop. It took longer to cook than the recipe stated. I did take off stove and broil it for a few minutes on top and bottom to make the bacon crispy on the outside. They were very good. Lots of calories though!!

            A 6oz chicken breast is quite a nice serving. I went with 5oz and used low sodium bacon with half the ham. I cut it down to 405 calories, 50g protein, 22g fat and 1g carb.

                    Made this tonight. Really good! Left chicken thick, add ham and 2 Swiss cheese to 1 breast.. skillet fried side for 8 min and the chicken sides for additional 2 min per side, then transfered to oven 400 degrees at 20min.

                      Nothing like 8 slices of bacon in one day. The calorie count CM provides is not accurate. There are way more calories in this dish then we are lead to believe.

                        Nope. It calls for 3 slices of bacon per chicken breast. And this makes 2 servings!!
