    Slice the avocado in half, lengthways and remove the stone.

    Add the mayo, lemon juice, zest and dill to a mixing bowl. Stir to combine.

    Roughly dice the salmon and add to the bowl along with the shrimp. Season and mix to coat in the dressing.

    To serve, divide the salmon mixture evenly between the two avocado halves.

    Decadent lunch! Had to use dried dill so i prepared the filling 2 hours in advance to allow the dill to rehydrate and do its thing.
