Low Carb Ultimate Chia Seed Pudding

Chia seed pudding is one of the easiest vegan keto recipes and a great way to fill up on fiber and is a great way to add fat to your diet as you can top it with seeds, nuts, and all kinds of nut butter.

What kind of milk can I use?

Any Keto-friendly milk works here from cow’s milk to non-dairy milk like soy milk, cashew milk, almond milk, and coconut milk. Stir away from canned coconut milk, though, as it tends to make the pudding too thick.

Can I double the recipe?

Yes, you can double the recipe. The only difference is you will need to make sure you are stirring the chia seed pudding a couple of times before you let it go overnight as the seeds tend to sink to the bottom and coagulate without thickening the whole mixture. Stirring prevents this from happening.

What other toppings can I add?

Keto-friendly berries, sliced almonds, peanut butter, chopped dark chocolate are all fun ways to make this chia seed pudding your own.

Ingredients

  • Almond Milk

  • Blueberries

  • Step 1

    In a quart-sized container, combine add the milk.

    Add the chia seeds and give them a good stir.

    Top the container with a lid, and place in the fridge overnight. Stir them several times before allowing the mixture to go overnight as the seeds tend to clump to the bottom which prevents the entire mixture from thickening. Stirring it a couple of times prevents this from happening.

    The next day, once the pudding has thickened, pour a serving of pudding into a bowl.

    Top each bowl with fresh blueberries, 2 tbsp of almond butter and 1 square of dark chocolate chopped. Serve immediately.

    I would recommend that you switch the almond milk with oat milk and add 1/2 cup of vanilla flavoured greek protein yogurt with a tablespoon of maple syrup. Gives it a lot me flavor. Also there’s way too much milk. You only need 1/2 cup of milk and 1/4 cup of chia seeds. So to sum it up try this instead 1/2 cup of oat milk 1/2 cup of Greek yogurt vanilla flavoured 1/4 cup of chia seeds Pinch of salt A dash of vanilla A tablespoon of maple syrup Toppings: fruit of your choice, a little bit of Greek yogurt and a little honey if you want

      Haven't tried this yet, but it seems to be lacking a sweetener to taste. I use unflavored almond milk in mine and also heavy cream. I add Monkfruit to my liking and then vanilla and any other flavoring I want. I've done banana, chocolate, almond and even strawberry

        I went maybe 4 spoons in and I couldn't anymore. I liked the chia pudding by itself. I'm thinking I'll change it up a bit next time. I'm going to try vanilla Almond milk, chia and berries.

            Add a teaspoon of real vanilla to the milk/chia seed mix The next day add a few tablespoons to 2 oz of fage 5 percent yogurt 1/2 tsp lankanto munk fruit sweetener and some cinnamon Looks Kinda like oatmeal, I also add a heaping tablespoon of the keto granola Yummy and just over a 100 calories and about 3 to 4 carbs , I also make a scrambled egg on the side with a veg yummy

              This Chia Seed pudding is better with raspberries because they have a lower carb content.

                I wasn’t sure about the blueberries and almond butter together but it was delicious. Also the amount of almond butter seemed like too much but nope. Very good recipe, I will make it again for sure.

                  Love this!! It was yummy! I put some cocoa nibs instead of the square of the dark chocoloate. Love the taste with almond butter!
