This lemon poppy seed mug cake is bright and tart! I love how quickly this comes together as it is one of my favorite cakes. Paired with a sweet and tart lemon glaze, this mug cake will have you satisfied. I used the icing/confectioners sugar version of erythritol.

Recipe Steps

  • Step 1

    Melt butter in an extra large mug (12 oz) in the microwave for 25-30 seconds.
    Step 1
  • Step 2

    Add in the almond flour, egg, baking powder, 3 T Swerve icing sugar and ½ lemon juice. Mix well.

  • Step 3

    Add in the poppy seeds. Microwave on HIGH for 1-1 ½ minutes until cooked through.

  • Step 4

    In the meantime, combine the rest of the lemon juice (¼ T) and 1 T Swerve icing sugar to form a glaze and drizzle it on top.

    You do realize that NET carbs are a sales gimmick, right? Real total carbs are the best way to count in order to heal metabolic disorders and actually lose fat/weight. Nothing tastes as good as feeling good feels. 🖐🏼

      Love this mug cake, I put some chia instead poppyseed and put it in the toaster oven to brown a little, I didn’t put the sugar sauce on top i just put a small amount of keto whipped cream with some lemon zest 😋

      Why don’t the amounts for the lemon juice and icing sugar not match between the measurements listed in ingredients listing and the measurements listed in the instructions?? Which did any of you go by when making this recipe?

        Because one measurement is for the cake itself and the other is for the icing.

          This was really good. I used butter extract instead of vanilla and it tasted like pound cake. I also doubled the poppy seeds. They broke up the almond flour taste. I also liked it because it isn't easy to eat fast so it lasts a little while.

          Excellent! I too added vanilla but also the poppy seeds. I had to cook longer but it could just be my microwave. This will become one of my top treats.

              Added vanilla and omitted poppy seeds as I had none. It was perfect. Only heated 1 minute and it was moist, not eggy at all. Thanks for sharing!

                  Yum! This hit the spot. I did add vanilla, per comments. Will definitely make again. May add a little more poppyseeds when I do as would like a bit more of that flavor.

                    This is my in my opinion the best tasting mug cake I've tried. I put 2 tablespoons of heavy cream on top and enjoy 😋

                      Pretty good. I put in vanilla extract after reading comments. I also omitted the poppy seeds and it tasted great.

                        It was alright. It had a very strong egg taste. Maybe if vanilla was added it would be more enjoyable.

                                      I used stevia to sweeten, instead of the sugar alcohols and it still turns out great without the extra carbs (subtracted or not)

                                      If I understand this correctly we can only subtract half of the sugar alcohols from the total carbs?? Way over and I didn’t pay attention until after I ate it.
