  • Step 1

    Slice the zucchini in half lengthwise and scoop out some of the center to provide extra room for the filling. Heat a griddle pan over a high heat and add the zucchini slices cut side down. Cook for 3-4 minutes each side until tender and char lines appear.

    Heat the olive oil in a skillet over a medium heat. Add the beef, cooking until just browned then crush the garlic and add to the pan. Stir well and cook for a minute to soften.

    Roughly dice the tomato and add to the pan with the oregano, salt and pepper. Stir well and cook for a few minutes until the beef is well browned and the tomatoes have softened.

    Divide the cooked beef between the two zucchini boats.

    Scatter over the grated mozzarella and fresh basil to serve.

    I think to make this with a Greek flare would be to use ground lamb with delicious melting graviera Greek cheese topped with some feta. That would take this recipe over the top.

      I made the meat mixture and stuffed them raw popped in oven with foil for 1st half hour then last 20 minutes without foil. Why dirty all those pans! Great dish!

        Pretty boring unless you add spices. Not enough for my husband w using just 1 zuc split.
