This salad is an easy egg salad recipe for an egg fast diet! Hard-boiled eggs are sliced thin and tossed with plenty of mayonnaise (one tablespoon per egg, to be exact)! The result is a creamy, delicious cold salad that is perfect for an egg fast diet. The salad is a great one to keep around in the fridge for a ready-to-go meal. The parsley on top is optional but adds a nice flavor in contrast to the eggs.

The easiest way to slice the eggs is to use an egg slicer. An egg slicer will consistently achieve even pieces. Even a person with the best knife skills will have a hard time holding on to a slippery egg!

Recipe Steps

  • Step 1

    Prepare a medium-sized saucepan full of water and bring it to a boil. Slowly and gently lower the raw eggs into the boiling water using a slotted spoon.

    Allow the eggs to cook for 10 minutes. Then drain the water and add plenty of ice and cold water to fill the pot. Allow the eggs to chill thoroughly in the ice water bath, making them easier to peel.

    Peel the eggs and run them in cool water to remove any small shells.

    Slice each egg in an egg slicer and place it into a mixing bowl.

    Pretty straight forward, I don’t know what the confusion about serving size relates to, but everywhere in this recipe, the serving is referred to as “1 bowl”. I think that’s pretty obvious: a serving is 1 BOWL… (how about adding some chives or chopped green onions…)

      Primal kitchen avocado Mayo tastes terrible (similar to stale miracle whip), I'd substitute for regular Hellman's mayo.

          You can but this is meant to last 4 meals, 1/4 of the total bowl for each meal

        No, the serving size under th nutrition facts is 1/4 of a bowl so this would be 4 meals if that is accurate

          Another member said 1/4 of the bowl is one serving. So the whole thing makes 4 servings.

          Yes, it is considered to be one serving. Personally i can only eat half of it in one sitting.
