Zucchini
8 ounce
Bell Pepper
2-½ oz, raw, yields
Mild Banana Pepper Rings by Mt Olive
¾ ounce
Kalamata Olives
1 ounce
Spinach Raw
1 cup
Garlic
2 clove
Salt
½ teaspoon
Black Pepper
¾ tsp
Organic Italian Seasoning by Spice Islands
1 tsp
Olive Oil
¼ cup
Red Wine Vinegar
1-½ teaspoon
Lemon Juice Raw
½ tablespoon
Recipe Steps

Step 1
Cut both ends off a medium sized zucchini. Use a spiralizer to create noodle strands. This will serve as the “pasta.” You can cut the strands in half so they aren’t too long.Step 2
Slice the bell pepper, banana peppers, olives, and spinach into bite sized pieces. Combine this with the zucchini.Step 3
Toss together all the chopped veggies with the remaining ingredients. Serve immediately and store any leftovers in an airtight container. At your own discretion, you can squeeze additional lemon juice over the pasta salad for freshness. Enjoy!

The recipe calls for 2 garlic cloves in the list of ingredients but doesn’t mention the garlic in the directions? Help!

Fresh and delicious. I added fresh basil and some Cavendars Greek seasoning and it turned out great. Add some protein to the leftovers for a lunch.
