This cinnamon cereal is chock full of delicious, good-for-you ingredients and it is paleo too! It retains a nice crunch once milk is poured over it in a bowl thanks to the coconut oil coating all the nooks and crannies. Spread the mixture out onto a baking sheet in a thin layer, but do not disturb it after it completely cools to create delicious, clumps of cereal. Break apart when cooled. This is super yummy as a granola snack too.

Recipe Steps

  • Step 1

    Preheat an oven to 320 F. Mix all ingredients except the last four in a medium mixing bowl. Melt the coconut oil and then add the sweetener and vanilla extract. Mix together until oil is coating all the ingredients well.

    Spread ingredients onto a parchment lined baking sheet into a thin layer.

    Bake for 20 minutes, stirring ingredients every 5 minutes until coconut and nuts are nicely browned. Remove from the oven and do not disturb the ingredients. Allow them to cool completely so they will be crunchy and in clumps when cooled.

    Pour almond milk over each serving. Store nuts in an airtight bag or container.

    You'll can take control of the ingredients in this recipe by creating a recipe of your own using Carb Mgr. I wouldn't use the 2 cups of coconut flakes, they are an 'avoid' item anyway.

      5889 calories and 90.1 grams of carbs for a 2 oz. serving, something isn't right. Please check and make sure you have the correct nutritional valve or delete this recipe!!!!

          I am extremely disappointed! This was a recommendation for my first weekly planner. It says „keto friendly“ until I click on it... then it says that I should avoid it (which I saw when all the ingredients were in the oven). Now I have a 1/8 of dry ingredients for 11 carbs!!!! This shouldn’t be recommended in the first place!

                    It is unclear if the macros include the milk!!! It’s listed in the ingredients, but the description in the log says “dry cereal”.

                                    Can you take out the sweetner or do you need it for the ingredients to stick? And if omitted what would the macros be please?

                                      Yes you can take it out, though I do think it helps the ingredients get a nice glossy look. The macros would be the same except the total carbs would come down from 33 to 21 g.
