If you need a quick lunch, or you want to meal prep, turkey sub rollups are an easy solution to your busy schedule. The bread is nixed, and your favorite sandwich ingredients are rolled up in crisp, leafy, romaine lettuce. You could also turn this recipe into a snack by dividing your prepared rollups into halves.

  • Romaine Lettuce

  • Turkey Slices

  • Step 1

    Remove four of the largest, outer leaves of a head of romaine lettuce. Rinse and pat dry, if necessary, and cut away the thick white bottom. To prepare one rollup, lay two of the leaves flat on a clean surface.

    Lay down about 3 turkey slices and two slices of provolone cheese on the lettuce. Next, lay down 2 slices of cooked bacon.

    Slice a small roma tomato, and lay down approximately 3 slices across the rollup filling. Then, distribute about ¾ oz of banana pepper slices across as well.
  • Step 4

    Roll the lettuce wrap up slowly and enjoy like you would a burrito! Repeat the above steps with the remaining ingredients to share with another, or save it for the next day’s lunch.
