Everyone’s favorite dip is now a delicious soup. Let’s be honest - you’ve always wanted to eat the whole bowl of queso to yourself, and now you can! Shredded chicken bulks this soup into a meal. The original recipe here was garnished with shredded cheese and parsley, but you can add many keto ingredients to the top of your soup, such as chopped avocado, cilantro, keto salsa, or sour cream.

  • Step 1

    Bring the first amount of chicken broth to a strong simmer in a large soup pot. Place in the raw chicken breasts to boil in the pot. You may cut the chicken into pieces if necessary, but as few pieces as possible will be best. Place a lid on the pot and cook for 12 minutes. Remove the chicken from the soup (turn the heat off and leave the broth) and transfer it to a cutting board. Use a pair of forks to finely shred the cooked chicken.

    While the chicken is cooking in the broth, heat the butter in a small pot over low heat. Once melted, whisk in the heavy cream. Heat until the fats are just about to simmer, but don’t let them cross over into simmering. Whisk in the cheddar cheese in 3-4 additions and then the cream cheese, allowing each cheese to melt before whisking in more.

    Once the cheese sauce is smooth and creamy, turn the heat off and set the cheese sauce aside to thicken. Return the shredded chicken from step 1 to the soup pot with the chicken broth. Pour in the second amount of chicken broth, place on the lid, and bring the soup to a boil.

    Reduce the soup to a low simmer, removing the lid. Then, slowly whisk the cheese sauce into the soup. Stir in all seasonings and gently simmer the soup for 5 minutes before serving.

    Added a can of fire-roasted Rotel tomatoes, otherwise it would have bland. Great recipe!

      This was a good recipe made better by doubling the spices and adding red pepper flakes to taste. I also added broccoli. Delish!

          I browned an onion in bacon drippings and multiplex this recipe to make a large pot. Really tasty soup. Make sure to drain the rotel.

                  We made our chicken stock and I wish it wasn’t so salty. Trying to figure out how to cut the salt. 😅 other than the salt it’s really good. I didn’t add any salt the the chicken stock/bouillon. I think next time will try store bought stock.

                    Next time put a chunk of potato in the too salty broth and let it simmer. Test the soup until it meets your tastes. The potato soaks up the salt, and your can throw the potato away. It won't add carbs.

                      Oh yum yum yummm! I added red bell pepper and cauliflower for some veg, a little coriander, replaced half the cheddar with pepper jack, and topped off the bowl with some bacon. Perfect for the beginning of Autumn

                        Pretty good! I added broccoli/cauliflower rice and a green bell pepper. I think it could use some spice so I'll add pepper flakes or some salsa next time.

                          So good! I doubled the garlic powder and added a pinch of kosher salt and broccoli florets. Will double batch and freeze next time.

                              Delectable! The whole family, kids included, loved it! My three year old has never liked soup before, but she loved this! The non-keto family members dipped tortilla chips in their soup as they ate it. I made a double batch so I can freeze some for another easy meal.

                                Delicious. I divided into 3 and added extra 1/3rd to intake. High but so filling it was a hearty evening meal.

                                  Are these protein counts correct? Seems very high for one cup of soup! Should be 30 Grams.

                                    Yum! absolutely!. Double batch from the start and so worth it. I have added spices to the cheese mixture +little chilly, tossed in broccoli for second boil for extra colour. Kiddos loved it. Will be making again for sure. Yum

                                            Delicious base! I added garlic, paprika & broccoli to make it a little heartier but I love reading all the other ideas too! Delicious-whole family enjoyed it! I put it all in the crock pot and it was so simple!

                                              Need more clearer instructions. You don’t mention the second chicken broth at all until it comes to adding it in. Also you don’t say how long to leave the broth before you add in the cheese sauce or to what heat...I’ll see how it turns out but there were defs a few surprises whilst making this.

                                                I switched pepper Jack cheese for cheddar and switched the cream cheese with Philly jalapeno cream cheese. Right amount of spicy🤗

                                                        Absolutely one of my most favorite. I added 1/4 cup of Rotel and it tasted just like chicken Rotel without the noodles.
