Best Keto Instant Pot Meatloaf

Meatloaf is an easy and convenient way to make several meals ahead, although traditionally, meatloaf takes quite a bit of time to bake in the oven. However, not with an Instant Pot! This is a Keto Instant Pot recipe you will want to make again and again. Tender ground beef is blended with salty, crushed pork rinds, diced white onion, an egg, grated garlic, and salt. The final mixture is foamed and placed into the bottom of an Instant Pot, then topped with a deliciously sweet and savory combination of ketchup, dijon and brown sugar sweetener.

How long do I set my Instant Pot for meatloaf?

Set the meatloaf directly into the Instant Pot at the bottom of the basket. You can shape it after it goes inside the basket. The Instant Pot should be set for 25 minutes on high pressure. You can add a bit of water to the bottom of the Instant Pot before closing the lid to play it safe, but we found that enough liquid and fat comes out of the meatloaf during the cooking process to mitigate any burning.

What kind of ketchup should I use?

Look for no sugar added ketchup; there are still carbs in this one but no unnatural sugars. You can opt for sugar-free ketchup, but they tend to have a lingering aftertaste. You can amp up the sweetness of the no sugar added ketchup with the brown sugar sweetener listed in the recipe.

    In a large mixing bowl, combine the lean ground beef, kosher salt, garlic clove (grated on a microplane), crushed pork rinds and an egg. Mix together well until just combined within no residual egg showing in the mixture.

    Add into finely diced white onion and mix well again.

    In a small mixing bowl, combine the ketchup, dijon mustard and sugar sweetener until combined with no residual lumps of sweetener present. Reserve ⅓ of this mixture and set it aside for topping the meatloaf at the end of the cooking time. Place the meatloaf mixture into the bottom of an Instant Pot basket (making sure to spray the basket with nonstick cooking spray first). Form the meatloaf into the desired loaf shape.

    Spread the rest of the ketchup mixture on top of the meatloaf evenly. Place the lid on the Instant Pot and turn the knob to sealed. Set the pot on high pressure for 25 minutes. Once the time has elapsed, release the pressure from the pot and allow the meatloaf to sit on the “keep warm” setting for 5-10 minutes. Very gently remove the basket from the Instant Pot and pour out any residual liquid formed during the cooking process. Tilt the basket and use a spatula to gently coax the meatloaf out from the Instant Pot onto a cutting board. Allow to cool slightly before attempting to cut the meatloaf with a sharp knife. Coat the meatloaf with the remaining ketchup mixture that was set aside previously.

    After a few minutes have elapsed, slice the meatloaf into 12 slices.

    After 2 failed attempts in the instant pot, into the oven in pieces it goes. Mine kept getting to a point and the word “burn” came on the screen. It never got pressurized. After an hour of messing with it - I gave up on the IP!!

        Eliminated pork rinds and mustard along with any sugar.

          Delicious. I was out of eggs so used an egg substitute. I didn't use an aluminum sling to get the meat loaf out. I used two very large serving spoons but before that I drained all the juices out and used my air fryer lid at 400F for 10 minutes. I first added another 1/3 of the catsup mixture on top of the meat loaf. The pork rinds I used were barbecue so added more flavor and I left out the garlic clove. True comfort food. Thanks for a great recipe. I did notice that because of not adding liquid to the pot (not basket) it starting counting down the time before coming to pressure so I added 10 more minutes.

            I don’t have an insta pot so I put it in a Bundt pan and cooked at 375 for an hour. Very tasty

              Shape the meatloaf round, same as the pot & put on foil, just lift the foil when done. I just made mine that way.

                Pot-in-pot. Broiled finished meatloaf under Instant Pot Airfryer Lid 12 minutes, checking every 4. Great flavor. Maybe cook it 30 instead of 25 minutes under pressure. Scaled recipe for 1.5 lb meat. I'll make this again. Served it with baked sweet potato.
