  • Step 1

    Lay 2 thin sliced center cut pork chops on a flat surface and season with the pepper, paprika, mustard powder, and garlic powder.

    Wrap 2 slices of bacon around each pork chop, tucking the loose ends under the chops or under and overlapping piece of bacon.

    Heat the olive oil in a wide pan over medium high heat. Lay the pork chops in the oil and cook for approx. 5 minutes on both sides. Simply cook until the outer bacon has crispy golden brown edges.

    When the pork chops are done, make the Polish gravy. Melt the butter in a small pan and toast the onion powder in it over low heat for about 30 seconds.

    Whisk the cream into the butter with the remaining seasonings. Bring to a simmer.

    Reduce the heat of the cream so it’s just lightly bubbling, not simmering. Whisk the cheese into the cream until melted to complete the gravy.

    For each serving, ladle about 2 TB of gravy on a plate and set a pork chop in the center. Drizzle a small amount of gravy over the pork chop. Garnish with additional dill or parsley.

    This recipe was absolutely delicious. My whole family liked it. I also used the same pan with the grease of the bacon too. I'll for sure be repeating this dish!!!

      This was absolutely amazing. I used the same pan I cooked the pork chops in and added the butter to the bacon grease. Omitted the cheese it reduced to a beautiful gravy without it. No need to thicken. Best gravy ever!!!!

          Oh WOW!! This was amazing! I actually made this for brunch. I didn’t use thin chops I used boneless thick chops and cooked on low turning the chops to cook bacon on every side to make sure chops were cooked through. Took a little longer but so worth it. Other than that, I followed the recipe exactly. It was so easy to put together. This is in our rotation! The flavors are so amazing. I fried an egg in the olive oil I used to fry the chops. Oh yum. Poured the sauce on the egg as well as the chop.
