Low Carb Beef Stifado
This low carb recipe is inspired by a classic Greek beef stifado stew, adapted to have all the flavor but less of the carbs!
Rich and flavorsome, the stew slow cooks until you are left with a thick, rich and aromatic sauce.
Perfect served with cauli rice or your favorite low carb veggies.

Ingredients
Diced Beef by Ashfield Farm
1 pound
Garlic
2 clove
Cloves by Hawaii Pharm
¼ teaspoon
Balsamic Vinegar
2 tbsp
Tomato Puree
2 tablespoon
Rosemary Fresh
2 tbsp
Herbs Dried Bay Leaves by Melissa's
1 tbsp
Olive Oil
2 tablespoon
Spices Oregano Dried
2 tsp, leaves
Shallots
1 tbsp, chopped
Tomatoes
1 medium
Beef Stock Pot by Knorr
1 cup
Ground Cinnamon by Tone's
1 tsp
Salt
1 teaspoon
Pearl Onions
⅓ cup
Black Pepper
¼ tsp
Water
¼ cup
Spices Nutmeg Ground

Recipe Steps

Step 1
Add a little oil to a large casserole dish over a medium heat. Add the diced beef and sear on all sides. Remove from the pan and set aside.Step 2
Add the remaining oil to the pan with the beef juices and add the pearl onions and shallot, frying gently until tender. Then slice and add the garlic to soften.Step 3
Add the balsamic vinegar, tomato puree, cinnamon, nutmeg, 2 whole cloves and the oregano. Stir well to combine.Step 4
Chop the tomato and add to the pan along with the beef, season with salt and pepper and give everything a good stir.Step 5
Pour in the hot stock and add 2 sprigs of rosemary and 2 bay leaves. |The stock needs to just cover the beef, if not, add the ¼ cup of water.Step 6
Bring the stew to a boil then reduce to a simmer for 2 hours, stirring regularly until the sauce is thick and reduced. If the sauce starts to look to dry, you can add extra water whilst cooking.Step 7
On serving remove the bay leaves, rosemary stalks and cloves. Serve with cauliflower rice or steamed broccoli.

I will try making this again, but next time I won't add the cloves, nutmeg or cinnamon. The nutritional info is missing...

I made this recipe in the slow cooker so I put in less liquid. The spices really added flavour and I will be making it again.

Oh my God . I LOVE IT . The flavour is unbelievable. I added some spinach instead of cauliflower rice with 1 avocado really nice combination. Thank you so much

Any whole cloves or you could use 1/8th tsp of ground cloves.

This is very tasty! I used beef but could easily sub in lamb, moose or venison. I also added mushrooms which made it even meater

Hi Lucia, I do not have the macros available, however, if you go to the 'my foods' section of the website you can input your own recipes with the above ingredients and adjust the quantities to meet your required macros. Hope this helps.

Yes i can't see why not, though i have not tried this myself. I would cook it low and slow to ensure the beef is really tender.

I added a tsp of allspice to the mixture as well. Also added about a tsp of Better Than Boullion mushroom base which pumped up the flavor. Served over cauli rice and it was VERY good!
