Keto Chicken Thighs with Bacon and Collard Greens
These crisp and golden chicken thighs are served on a bed of wilted collard greens and crispy bacon.
This makes for a great lunch or dinner served with cauliflower rice.

Ingredients
Chicken Thigh, Skin Eaten
3 medium
Bacon
3 slice - 6" long
Collard Greens
3 cup
Lemon Peel Or Zest Raw
2 tsp
Olive Oil
2 tablespoon
Garlic
1 clove
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat a tablespoon of olive oil in a large frying pan over a medium/high heat. Season the chicken thighs with a little salt and pepper and arrange skin side down in the hot pan. Cook until the skin is crisp and golden - about 10 minutes. Flip the thighs over and continue to fry until the chicken is completely cooked through - about 8-10 minutes. Remove with a slotted spoon, set aside and keep warm.Step 2
Roughly dice the bacon and add to the pan, cooking until browned all over and just crisp.Step 3
Mince the garlic and add to the pan along with the lemon zest, remaining olive oil and stir well to combine, cooking the garlic until tender.Step 4
Roughly slice the collard greens and add them to the pan, tossing in the oil and seasonings until just wilted.Step 5
Top the greens with the crispy chicken to serve.

This is a great dish!! Husband, who is picky, asked for this to be made again! I only used the 1 Tbsp. Of Olive Oil, for there was enough grease cooked from the bacon. I did parboil the Collards first in a separate pot for hubby doesn’t like crisp veggies. Added the semi cooked Collards to the fried bacon, zest, and the zest. When mixed, topped with the cooked thighs. A+ rating!!

Wouldn’t cook this again. Too much grease from the chicken and olive oil. The lemon zest made the greens taste bad and were very bitter.

Easy enough, taste good but lack of that little extra that will make it special.
