  • Cilantro

  • Step 1

    Soak 4 wooden kebab skewers in water for 20 minutes to prevent catching in the oven.

    Finely chop and de-seed the chilli and finely chop the cilantro. Add both to a large mixing bowl with the jumbo shrimp, olive oil, lime juice and the zest of ½ the lime.

    Use your hands to combine the ingredients together thoroughly, cover and leave to marinade in the fridge for 15 minutes.

    Divide the shrimp evenly, then thread onto the four soaked skewers.

    Heat the oven grill to high and grill for 3-4 minutes on each side until piping hot through. Serve with a simple salad and our keto avo mayo dressing.

      Seriously 1.8 ounces is enough for a meal? According to the Photo it appears each skewer has approx 7 "Jumbo?" shrimp and a serving is two skewers? And the recipe name has "Jumbo" in it.

          Using weight, 1 serving is 5 large shrimp. 16-20 count per lb.
