The Mediterranean Keto diet is a flavorsome combination of healthy Mediterranean foods that are Keto-friendly at the same time. This fantastic beef stir-fry is a simple yet delicious recipe you can prepare in no time. This dish can be served on its own, but you can also serve the leftovers with some zucchini noodles or over a bowl of mashed cauliflower or broccoli. We suggest adding some olive oil right before serving for some extra flavor. You can also add some sugar-free tomato sauce to the meat and prepare a slightly different and healthier version of Keto-friendly bolognese sauce. The options are endless. Enjoy!

As mentioned above, the Mediterranean Keto diet uses foods that are typical for the Mediterranean diet but also low-carb and Keto-friendly. This is the perfect combination if you want to eat something different, and healthier.

*How to store the leftovers?

You can store the leftovers in air-tight containers and refrigerate them for a couple of days. Optionally, freeze the leftovers until ready to use.

Can I use another type of meat?

Yes, ground pork or lamb would also be perfect for this recipe. You can also combine some ground pork with the beef.

Ingredients

  • Feta cheese

Recipe Steps

  • Step 1

    Peel and finely chop the onion. Heat the olive oil in a large pan over medium-high heat. Add the onions.

    Cook the onions for 4-5 minutes, stirring occasionally. Finely chop the pepper. Add to the pan and stir well. Continue to cook for another 5 minutes.

    Roughly chop the spinach. Add to the pan and stir well again. Continue to cook for 2-3 minutes.

    Remove the vegetables from the pan and set them aside. Add the ground beef to the pan. Season with salt, pepper, and dried chives. Add one tablespoon of butter and cook for 12-15 minutes over medium-high heat. Stir occasionally.

    Add the prepared vegetables to the pan. Crumble the cheese and add to the pan as well. Optionally, leave some of the cheese for serving. Mix well and remove from the heat.

    Transfer to serving plates. Top with the remaining feta and optionally garnish with some fresh basil. Serve immediately.

      The way this recipe is written it seemed like it might be a little bland. So I added garlic powder, kalamata olives, and some Italian seasoning. It was really easy and quick to cook. I weighed the whole recipe after it was cooked, and it came out to 20 ounces. So I divided it up into 4 servings of 5 ounces each. That didn’t seem like very much food, but it really filled me up. I will probably make this again.

        I would make again. Pretty straight forward/easy and satisfying. My only caution would be taste your feta first. I have very tasty local farm feta (Maplebrook farm in VT) but dish was way over salted because it’s a very salty feta. Next time I make I won’t add any salt to dish beside feta. I did use pork not ground beef.

              Simple and tasty enough, especially with a few mods. I swapped white onion for red, add a good splash of Worcestershire sauce and pasta for the carb peeps. The feta gives it the real kicker so add more if you like!

                  That is more effort than I usually put into cooking dinner, but this one looks like it might be worth it. It’s only 1/4 pound of meat/serving - not enough for me, but doubling the portion size is still only 9 carbs. I’m going to give this a try.

                    You could also try putting it over a base you enjoy. Lettuce? Riced cauliflower, or broccoli? Maybe a different veggie? Fried cabbage would work here, too.

                    This recipe was very easy. I added mushrooms. Next time I’ll add another cup of spinach, maybe two and tomatoes. Tasty and will try it again.

                                Super easy and delicious. I add olives and tomatoes if I have them on hand, sundries tomatoes would be delish! Although it's not keto it goes really well with cous cous. I make this once a week 😅🤣
