Keto Sausage, Broccoli and Cauliflower Bake
This tasty Keto bake is loaded with fats and flavor and makes a filling low carb dinner or lunch option - perfect for families. Our Keto sausage and veggie bake is prepared with diced pork sausages, tender broccoli, cauliflower florets, and a creamy cheese sauce. The dish is then topped with extra cheese and oven-baked until bubbling and golden.
What Sausages Can I Use?
We have used a plain natural pork sausage diced into bite-sized chunks for our Keto bake recipe. You can use any kind of pork sausages you prefer, with or without seasonings. A herbed sausage will add extra flavor or you could even use a spicy sausage for some heat. If you do not wish to use pork, you can swap the sausage for diced chicken. Please be sure to adjust your cooking times as needed to account for different ingredients and adjust your macros where necessary.

Ingredients

Parmesan Cheese

Broccoli Florets Raw

Cauliflower Florets by Flavorite

Step 1
Add the cauliflower and broccoli florets to a large saucepan and cover with water. Bring to a boil, then reduce to a simmer. Cook for 4-5 minutes until just tender. Drain completely and set aside to steam dry. While the cauliflower is cooking, roughly chop the sausages into bite-sized chunks. Heat the olive oil in a skillet over a medium heat. Add the sausage pieces and cook until browned all over.Step 2
To prepare the sauce, melt the butter in a small saucepan over a low/medium heat. Crush the garlic and add to the pan, sweating until tender. Add the cream cheese, stock, salt, pepper and mustard powder. Stir well to combine. Bring to a simmer until the cream cheese has melted and you have a smooth sauce.Step 3
Add half a cup of grated cheddar cheese and the parmesan to the saucepan. Stir well to combine until the cheese has melted. You should have a smooth and creamy sauce.Step 4
Preheat the oven to 400 degrees Fahrenheit. Select a medium-sized oven-proof dish. Arrange the part cooked cauliflower and broccoli in the base of the oven dish. Arrange the sausage pieces in amongst the vegetables in an even layer.Step 5
Pour the creamy cheese sauce over the vegetables and sausages. Make sure everything is covered evenly in the sauce. Sprinkle the remaining grated cheese over the top of the sausages and vegetables. Transfer to the oven and bake for 20-25 minutes or until piping hot through, bubbling, and golden.

I cut the recipe in half for two servings. I didn't have link sausage so I used one patty per serving and I baked it in two individual casserole dishes. The flavor was amazing, would not have thought of mustard in it, but it went well. It was all the creaminess and cheesyness I was craving. Will definitely make it again.
