Ingredients

  • Bacon

  • Cream Cheese Spread

  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Select a muffin tray and line the edges of 6 individual muffin cups with one strip of bacon per cup. Slice the remaining bacon strips in half and layer a half strip into the bottom of each cup so that the base and sides are completely covered.

    Add the eggs, cheeses, salt and pepper to a mixing bowl and beat together to combine.

    Divide the cheesy egg mixture between the 6 bacon lined cups.

    Transfer to the oven for 18-20 minutes until cooked through and golden brown on top.

    i had to use a lot of substitutions. i used greek yogurt instead of cream cheese, bacon bits instead of bacon, and mozzarella cheese instead of feta. i had to use two eggs instead of 5 and it still made 4 mini muffins. even after all the substitutions, this meal is amazing!!

      Love these! I added cooked prosciutto in the mix instead of lining with bacon. I doubled the recipe and added a tablespoons of cream. I do need to cut out the salt next time as the prosciutto made it salty.

            Very good. My bacon slices were quite long, so I needed only 6 slices. I used 3 large eggs and cheddar cheese since I didn’t have feta. Yummy!

              So good! I precooked the bacon a little and they were great with crispy bacon. I made a bunch and put them in the freezer for a quick on the go breakfast!

                This was really good! I followed the recipe but put the bacon lined muffin cups in the oven while I mixed the eggs to see if it might help cook them. Probably not a good idea as the bacon shrunk and now I have a whole lot of egg mixture left after filling the bacon. I put the oven on high (210 F). Next time I'll put it a little lower because it burnt the tops a bit. But to my surprise I had little soufflés ! Also next time, I won't add extra salt as the bacon is salty on its own and maybe I'll add some spinach to the mix. Will definitely make this one again! Especially since I have more egg mixture left 😉

                  Turn the muffin pan upside down and wrap the bacon around the outside of the cup and bake. It makes little bacon baskets.

                      These were great! Used large eggs and large muffin tins, should have a pan underneath to catch bacon run-off, Oven now needs cleaning. I put feta in cups after egg mixture to make even. Also warmed regular cream cheese slightly before mixing in eggs etc.

                      These things rock! I had the same result at 20 minutes - the bacon is a little underdone but the muffins are already browned and risen. No problem. Heat up your cast iron frying pan with a little bacon grease in it and finish off the bacon, rolling it around on the edges and flipping it on the top and bottom. Viola! What a great alternative to the same old bacon and eggs for breakfast. I can see dozens of versions of this recipe. Thanks!

                          I made these today and they were great. My only suggestion would be to cook the bacon 1/2 way first because it doesn’t get very crispy.

                          Loved this recipe , I did cook it at 400 for about 30 minutes to get my bacon more crispy . At 20 minutes the outside was nice and crispy but the bottom on the inside wasn’t all the way cooked through . First time trying feta cheese and it was amazing in this recipe , will add a little more next time I make it !

                            Definitely would say you can freeze them because they're just cheese, egg and bacon. All three of those freeze very well
