Keto Pork Shoulder and Pan Gravy Skillet
This simple weeknight skillet dinner requires no added salt because the pork and gravy offers just the right amount of salty flavor. A rich pan gravy balances out the flavors. This is a great fatty dish in general, but it is also great if you’ve been suffering from “keto flu” due to a cut in sodium intake.

Bacon
3 slice - 6" long
Pork Steak, Shoulder, Visible Fat Eaten
1 pound
Black Pepper, Ground
¼ teaspoon
Onion Powder
¼ teaspoon
Garlic, Powder
¼ teaspoon
Sesame Seeds
½ teaspoon, whole pieces
Unsalted Butter
1 tablespoon
Heavy Cream
3 tablespoon
Black Pepper, Ground

Step 1
Start by cooking strips of bacon to a crisp over your stove. Once done, transfer the bacon to a cutting board and chop into imperfect bacon bits once cooled. Leave this aside for later. Also, make sure to leave any fat in the pan.Step 2
Prepare the pork shoulder by cutting it into 4 steaks and removing any small bones, if necessary. Season the tops of the pork steaks with HALF of the seasonings (not including the pepper used for the pan gravy).Step 3
Place the pork steaks seasoned side down in the pan of bacon fat. Sprinkle the remaining seasoning over the bare sides of the pork steaks. Place a lid over the pan and cook the steaks on medium heat for about 4-5 minutes per side, flipping once.Step 4
Use a pair of tongs to transfer the cooked pork steaks to a clean surface to rest. Meanwhile, deglaze your pan over low heat by melting in the butter. With the heat on low, stir in the heavy cream and final amount of black pepper. Heat the cream sauce through until the fats have emulsified into a smooth gravy.Step 5
Return the pork steaks to the pan of gravy over low heat. You can place the lid over the steaks to help them reheat through quickly. Sprinkle the bacon bits over the top of the pork.Step 6
Enjoy hot! This skillet has been garnished with chopped parsley.

Really good and even my picky hubby loved it! Of course i added more bacon because he eats it as much as he can and that allowed for more flavor and cream gravy.

This was excellent!....but I did add 1/4 tsp of salt to pork steaks and extra garlic powder. Next time, would add more cream because not enough gravy for 4 steak portions. Served this with cauliflower mash and salad greens. Even non-keto family members enjoyed!

I thought this was amazing. Everything came out yummy. Because I eat a variety of ethnic foods the gravy was perfect. Middle Eastern foods hardly ever if at all use flour so the gravy’s are thin. I know this is not a Middle Eastern dish but it was very rich in flavor. We have added this to our favorites list. Even the younger picky eaters in my household loved it. They are 2, 3 & 5 year old little boys. They went for seconds! I did add more cream for more gravy but that’s the only change I made. I wish we could post pictures.

I am new to keto lifestyle so please don't laugh at me. I made this tonight for my husband and I. It was amazing in my book, bit my husband thought the gravy was too rich. I did use 1/8 tsp xanthan gum powder to thicken the gravy. Is that what caused the rich taste or can I use half and half instead of whipping cream? BTW he is not doing the keto.

Xanthan gum won’t generally cause flavour changes, it helps to thicken things or make doughs more pliable. So your husband probably just has more sensitive tastebuds. Also whipping cream is better to use because of it’s higher fat content. I think. And it’s so delicious! Maybe just add a bit more so the flavour simmers down a bit.

This was amazing! I used thin cut pork chops (which I prefer) and reduced my cooking time a bit. Came out perfect - will definitely make again!
