Spinach is very low in carbohydrates and is one of the best keto vegetables you can eat! A layer of melted cheese is an added bonus! Spinach pie will complement just about any main dish you could think of.

Ingredients

  • Spinach

    Spinach

  • Ricotta Cheese

    Ricotta Cheese

  • Black Pepper

    Black Pepper

    1-½ teaspoon

  • Parmesan Cheese

    Parmesan Cheese

    1 cup, shredded

  • Step 1

    Preheat the oven to 375 degrees. In a bowl, combine the chopped spinach with all the remaining ingredients except for the parmesan.
    Step 1

    Spray a shallow baking dish with pan spray, and pour the mixture into the dish. Spread the shredded parmesan cheese over the top, making sure the filling is completely covered.

    Bake the dish, uncovered, for about 25 minutes or until the spinach is soft and wilted and the cheese is golden brown.

    Serve hot with your main dish!

    Does not need the salt - plenty from the cheese. Used baby spinach/arugula mix, added mushrooms and a thin layer of mozzarella along bottom. Made as a main dish for my dinner. 👌

        This was simply wonderful! My husband devoured it! I took note of what others suggested & left the salt out entirely. I cut the pepper back to 1/2 teaspoon. I did not have shredded Parmesan so I used 3/4 c shredded mozzarella & 1/4 c of grated Parmesan. Scrumptious

          Don't add the salt, parmesan naturally contains salt and if you add salt its way too salty. Otherwise it was good.

              I don't recommend using any salt at all and light pepper . Delicious dish other than the saltiness

                Way way to much salt and pepper. Cut back on it as much as you can. I would do 1/2 tsp salt and 1/4 of pepper and do 1/2 cup Parmesan cheese. You can 4 times the recipe and use 1 cup of Parmesan.

                  Oooo, my goodness, this is so good! I made the two servings option, but I still used two eggs instead of one because I love eggs lol. This was perfect!! Super easy to make!

                    I buy the extra large bag of fresh spinach from sams and then freeze it d ecause I can’t seem to use up my fresh before it goes bad then when I want spinach in a recipe I squeeze it in the bag to break up and take out what I need . It is so much better than regular frozen fresher don’t hVe all the water

                        Only used 1/2 tsp of salt based on reviews and it was great. Going to try adding feta cheese and reducing salt even more (feta is salty) next time I make this.

                            Add ground mustard and nutmeg! Just a turn or two of salt and pepper. Lovely cold too for breakfast.

                                Parmesan is a salty cheese often used to "salt" food. Use 1/4 tsp salt. It's easy enough to sprinkle salt on a serving.

                                    I would suggest avoiding freezing, since thawed spinach came become very watery and mushy.

                                  I love this one. I made it for dinner last night but I actually like it better for breakfast. I tripled the recipe and now I have quiches for the next few days. Quick and easy and super yummy. I may play with the cheese varieties. Skies the limit with this one.
