These are the best Keto breakfast sandwiches you’ll have all week! Low-carb biscuits are baked in your oven and sliced fresh. They sandwich a cooked sausage breakfast patty with a slice of melted cheddar cheese. Make this recipe for breakfast or for a group you have to feed in the morning. Not only is this recipe useful for your Keto diet, but you can make it for kids for a sleepover breakfast or a breakfast-for-dinner snack. Eat these little sandwiches at lunchtime too. If you’re just serving yourself, eat the Keto sausage breakfast sandwich with a cup of butter coffee for a full-fat meal.

Storage tips

Make sure your breakfast sandwiches are completely cooled before you store them either in an airtight container or in a Ziploc bag. Keep the sandwiches in your refrigerator for up to 3 days. To reheat, wrap a sandwich in a paper towel and nuke it in your microwave for 15 seconds at a time.

Make your own sausage patties

If you don’t have frozen patties on hand, you can make your own sausage patties. Make them using plain ground pork sausage with any seasonings you want. If you use a non-stick skillet on high heat, you shouldn’t need to use any cooking oil. Just follow the cooking instructions in the recipe.

    Preheat an oven to 400 F (200 C). In a medium mixing bowl, combine the almond flour, salt, and erythritol. Add diced butter and crumble the butter and the flour mixture together until the butter is in pea-sized pieces.

    In a medium liquid measuring cup, whip the egg whites with a hand mixer until a stiff peak forms. Add half of the egg whites to the flour mixture and mix together to lighten it. Then add the rest of the egg whites and very gently fold all the whites in until combined well.

    Divide batter into silicone or paper cups sprayed with cooking spray. Bake for 12-14 minutes until nicely golden brown. Allow them to cool slightly before removing them from their liners.

    In the meantime, cook the sausage patties in a medium-sized nonstick skillet. Heat the skillet over high heat until hot, add the sausage patties, and turn the heat down to medium-high. Continue to cook them on one side and then the other for about 12 minutes or until cooked through and browned.

    Divide slices of cheese into quarters, and place one quarter on top of each sausage patty. Turn off the heat and cover the skillet with a lid until the cheese has melted. Leave the pan aside to cool temporarily.

    Remove the cooled biscuits from their liners. Cut them in half with a serrated knife. Then, arrange them on a serving plate.

    Transfer the cheesy sausage patties and top of one biscuit slice with the other half of the biscuit placed on top. Serve the sandwiches hot. Wait for sandwiches to cool completely before storing leftovers.

        Why did my biscuits turn out brown like the color of the flour? Maybe I needed to beat the egg whites longer?? This still tastes good.

          These baked muffins work very well as the basis for Welsh Rarebit (grated cheddar cheese, mustard, Worcester sauce, beer, crumbled cooked bacon). Heap on top and grill until bubbly.
