  • Step 1

    In a stand mixer, whip together the heavy cream and first amount of stevia until you have a stiff whipped cream - about 2-3 minutes. Keep an eye on this first step to avoid turning your whipped cream into sweet butter! When done, set the whipped cream aside in a new bowl.

    Quickly wipe your mixing bowl clean and return it to your stand mixer with a paddle attachment. Mix together the cream cheese, second amount of stevia, and vanilla extract on a high speed. Continue mixing the cream cheese on high until it is totally smooth, free of lumps, and light and airy - almost as light as the whipped cream. This can take up to 5-10 minutes, while occasionally scraping the cream cheese back together off the paddle and sides of the bowl.

    Once the cream cheese is light and fluffy, mix HALF the whipped cream into the cream cheese on a very low speed. Then, use a spatula to fold the remaining whipped cream by hand into the cheesecake fluff. Enjoy immediately!

    I replace sweetener and the vanilla extract with torani sugar free vanilla and it’s just as delicious. Tastes like a vanilla cheesecake and cake batter. Top with little cinnamon!

        I don’t understand the servings yield. If I make it according to the recipe I only yield a cup of fluff. There is no way 16 servings at 1/8 of a cup. So I recorded it at 4 oz. Since my husband and I split it.

              I agree with the extra creamcheese for sure! I tried the monk fruit as I’m not a stevia fan it worked well for a keto dessert

                Delicious! I replaced the stevia with 13 drops of monk fruit, increased the cream cheese to 8 oz and divided the mixture into two and flavored each half with strawberry or chocolate. I used freeze dried strawberries which I grated finely, and powdered cacao. Topped each layer with more grated strawberry or sugar free dark chocolate. Thank you for this great recipe.

                      This is great! I used a half packet of no sugar strawberry Kool-aid and added two more packets of Stevia and Monk Fruit sweetener. It came out great! Looking forward to trying this with other flavors.

                        I’m doing a lot of experimenting with fluff. I used this recipe with Confectioners Keto:Sweet. No after taste! Added 1/2 cup raspberries and chilled it Then put it on a small crust of: Almond flour with coconut oil, granulated Swerve, and whipped egg. I cook the crust till slightly browned cool then add the fluff put a few almond slivers and a raspberry on top. Everyone loves it! Even the non keto eaters! I do serve it as 1/4 cup, 1/8th is too small and it makes more sense to me to make them a bit bigger.

                          I made this recipe with 1 cup 35% cream whipped with 2 stevia packets. 1/2 brick (4oz) cream cheese softened, 1/2 envelope Jello raspberry sugar-free powder and 1 tsp vanilla extract. After whipping the cream till fluffy and the rest of the ingredients until completely smooth I divided into a silicone mould with 6 servings and put in the fridge for an hour to eat one as a dessert then put the other 5 in the freezer for later. I have 2 ideas… either the stevia could be omitted as the jello powder is quite sweet enough, or use less jello powder which would also cut back on the artificial sweetener, but would lesson the raspberry taste for sure. The quoted 16 x 1/8 cup portions didn’t seem to add up, as I did not end up with 2 cups of fluff. I had 1 1/2 cups (12oz) total. Maybe I didn’t whip it enough? I entered the ingredients as stated above in a new recipe creation with 6 x 2oz portions equaling 1.4 gram carbs each. Whatever way you do it… this fluff is delicious and could be varied so many ways with whatever flavoured sugar free option you decide to try. I will def be getting creative with it!!
