Low Carb Honey Thyme Carrots

Delicious carrots cut on a bias are tossed in a mixture of green olive oil, sweet honey, sliced garlic, and fresh thyme sprigs. The seasoned carrots are roasted briefly in the oven to create a delicious glaze that coats them. The resulting carrots have wonderfully sweet and savory notes that would pair perfectly with a fatty roast beef or roasted pork shoulder. You can swap the fresh thyme for other herbs like fresh rosemary.

Are carrots and honey Low Carb?

While carrots are higher in net carbs than other vegetables, those on a Low Carb or very physically active can happily enjoy root vegetables like carrots.

Can I use other herbs?

Feel free to use other woody herbs like fresh rosemary or a dried herb blend like herbs de Provence. If you feel up for some spice, ground chipotle peppers would be delicious paired with sweet honey.

What can I use other than honey?

If you want to make this completely sugar-free, substitute the honey for monk fruit maple syrup.

    Preheat an oven to 400 F. Peel the carrots using a vegetable peeler and trim the stem off. Cut the carrots on a bias into 1 ½” sections. Place them into a medium-sized mixing bowl.

    Add in the honey, olive oil, kosher salt, and thyme sprigs. Toss well to combine.

    Pour the carrots on a parchment-lined baking sheet and bake for 15 minutes or until the carrots are cooked but have retained some crunch. Taste and add more salt to your liking. Serve immediately.
