Keto Instant Pot Pork Ribs

These Keto pork ribs are pressure cooked in the instant pot until soft and tender, then basted in a sweet and sticky marinade and caramelized under the broiler. Simple to prepare but full of flavor, these Keto instant pot pork ribs are a real crowd-pleaser, perfect served with a hearty Keto salad and a creamy low carb slaw.

Can I Use A Different Marinade?

We have coated our instant pot ribs in a sticky Asian inspired marinade. The sweet sauce is prepared from maple flavored low carb syrup, salty Tamari sauce, zesty lime juice, and earthy sesame oil. Once the ribs have been pressure-cooked, they are basted in two coatings of marinade until perfectly caramelized. If you wish to use a different marinade, BBQ sauce will make an excellent alternative. You can find recipes for Keto BBQ sauce in our sides section.

Serving Suggestions

We love our Keto ribs served with an Asian inspired slaw, a hearty salad, or a portion of Keto fried rice. You will find a range of complementary options in our sides section. These ribs would also make a great addition to the summer BBQ. Once cooked in the instant pot, they can be basted with the marinade, and BBQ’d until crisp and charred.     Sprinkle the ground ginger, garlic powder, salt, and pepper over the ribs. Use your hands to rub the seasoning and spices all over the meat. Please feel free to adjust spices and seasoning to suit your personal taste.

    Place the trivet that comes with your instant pot in the base of the pot. Pour the apple cider vinegar and stock into the base of the instant pot. Arrange the seasoned ribs on top of the trivet. Place the lid securely on the instant pot and ensure it is set to sealing. Set the pressure to high and set the time for 30 minutes. After this time, do a quick release of the remaining pressure.

    While the ribs are pressure cooking, add the lakanto, lime juice, sesame oil, olive oil, and tamari sauce to a small bowl. Whisk together well to combine. You may adjust the condiment ratios to suit your personal taste.

    Once safe to do so, remove the instant pot lid. Preheat a broiler to high. Arrange the ribs across a grill tray. Brush the ribs all over with half of the prepared marinade. Place the ribs under the broiler for 5 minutes until golden.

    Carefully remove the tray and baste the ribs with the remaining marinade. Return the tray to the broiler for a further 5 minutes. The ribs should be golden and caramelized and slightly charred in places. You may cook for longer if needed. Serve the ribs hot with your preferred Keto sides.

    I don’t have a pressure cooker, so...I’ll slow bake, after braising at 300 for 3 hours then follow the steps. Will let you know.....
