Recipe Steps

  • Step 1

    Preheat the oven to 375 degrees.
  • Step 2

    Peel and slice the avocado in half lengthways, removing the stone. Slice the avocado into 8 even strips. Cut each strip of bacon in half, so you have 8 slices of bacon.

    Tightly wrap each piece of avocado with a piece of bacon. Once you have covered each slice, set aside on a shallow oven tray.

    Bring a small pot of water to a boil, then reduce to a bubbling simmer.
  • Step 5

    While the water is coming to a boil, transfer the bacon-wrapped avocado to the oven to cook for 8-10 minutes or until the bacon is completely cooked through and browned.

    Once the water is simmering, lower the eggs into the pot and set a timer for 5 minutes – longer if you want a firmer egg yolk. Drain the eggs and transfer them to egg cups to be served with the avocado bacon soldiers.

    I love these they are very yummy 😋 I am going to start making the bacon, wrapped avocados for snacks. They are very filling as well so full after I eat them

      I can only assume the egg was cracked then put in water verse a boiled egg. Not really clear on directions.

        You can crack the egg in bowl and pour it carefully into the water just as you would for eggs Benedict.

        Look at the pic….clearly a soft boiled egg. Don’t crack it into the water.

          absolutely. Just put in the oven or Air Fryer to crisp a bit. Poach new eggs. I like them as a snack also (without the egg).

          This is so true, I ate a slice of avocado before cooking it and it was so good, then I baked it w/the bacon and the taste was bitter 🤢

        I think the quantity of bacon listed in the ingredients is incorrect? It doesn’t match the amount called for in the recipe. Or maybe I’m misunderstanding

          If you only want to make one serving, the written instructions don't change, so they are still referring to how to make 2 servings.
