Ingredients

  • Chorizo

    Chorizo

    6 ounce

  • Cilantro

    Cilantro

    2 tablespoon, chopped

  • Shredded Cheddar

    Shredded Cheddar

    ¼ cup, shredded

  • Avocado Oil

    Avocado Oil

    1-½ tablespoon

  • Step 1

    In a bowl, combine all the ingredients except for the avocado oil. Then, divide the mixture into 4 sections and flatten them into ½-inch thick discs.

    In a shallow skillet, heat the avocado oil on medium-high heat. Then, place in the chorizo bites. Cook them in the oil for approx. 3 minutes per side, or until they become crispy and browned on the outsides.

    Didn’t work. Tried as the recipe calls and it was a mess. Tried to add an egg to bind and same thing. I used tube chorizo and it’s soft and just made a mess. Perhaps try firmer chorizo…

      The OP probably used fresh chorizo which has a more sausage consistency.

    This tastes so good. I used a stainless steel pan and 1 tsp oil and they did fall apart, but I threw in some eggs and it was yummy. I will definitely make this again!!

          Freeze them for 30 minutes to an hour

        I love these - the first time I made them they were mushy so I just added them to scrambled eggs. The next time I cooked in non-stick pan with no oil, came out perfect! Taste best with the cilantro (used parsley for friend who doesn’t like cilantro).

          If you want healthier chorizo, go to a "carneceria" (Mexican Fresh Meat market.) You can probably buy homemade by the pound choose either beef or pork...Not all grease...You can buy half beef and half pork and combine together...you can put in baggies in portion sizes. Shape like a sausage link and freeze.

            What kind of chorizo do I use squishy cooler one or hard one that doesn’t require refrigerating ( from ethnic food section on shelf at Walmart )?

              Use freshly made chorizo sausage available in most Mexican food markets. The packaged chorizo (the squishy kind) is for adding to recipes like scrambled eggs.

            These were amazing! I used the fresh pork chorizo from sprouts, served them with eggs. My family loved them. They came out perfect, did not fall apart or stick to the pan, like other reviews said.

                You are looking at "yield - 1 + 2 bites" meaning "1 serving of 2 bites" (bites means pieces, since the recipe is called 'Chorizo Bites', not literal bites of food). Simply click the - and + buttons to adjust the amount of servings you wish to make.

                4 stars because these are truly delish! These ingredients are awesome together 😍. I think this recipe needs some editing-my opinion based on two batches worth. This recipe definitely needs a binder unless you have time to spend babysitting the skillet. First batch I had to reshape as it cooked. I did end up with a sort of patty. 2nd batch I omitted the oil and added one egg to bind the ingredients which worked out so much better. If all else fails, scrabble eggs into it! I wouldn't discourage anyone from trying these bites, it is worth the meal!

                Chorizo should not need any added oil to the pan. I followed the instructions and these fell apart likely from the added oil and lack of binder. I will try again with a binder and no extra oil..... this batch will become chorizo and eggs

                      What type of chorizo did you use ? I ask because some one said there are 2 types . I have never had to slice chorizo! It’s alway squishy in a tube not solid.
