Keto Kimchi Omelette

On the Keto diet, you can never find enough ways to switch up eggs! Fortunately, there are so many ways to cook eggs and flavor them. Keto Kimchi Omelette is a delicious way to spice things up. Scrambled eggs are cooked with sauteed spicy, tart kimchi and then topped with sliced scallions at the end. The kimchi adds a nice fermented flavor to the eggs and would be delicious with an assortment of sides.

Do I have to add the fish sauce?

No, but kimchi already has fish sauce in it. If you have never had eggs with fish sauce, it is quite a delight.

Can I make this into a bigger omelette?

Yes! Feel free to add extra eggs to the omelette to suit your calorie needs.

What if my omelette breaks apart?

It is usual for an omelette of this type to fall apart because of the small pieces of diced kimchi inside. Simply flip the omelette the best you can and place it back together; it does not need to flip perfectly.

Ingredients

    Crack the eggs into a mixing bowl.

    Whip to break the yolks and combine the whites into the yolks. Add in the fish sauce.

    Slice the scallions and dice the kimchi.

    Preheat a small nonstick skillet over medium-high heat until hot. Add in the avocado oil and swirl the pan to coat. Add in the diced kimchi and saute briefly for about 30 seconds.

    Add in the scrambled egg.

    Once the egg begins to cook so that you can lift the egg with a spatula, lift the edges of the omelette and tilt the pan to allow the eggs to run underneath the omelette. Repeat this until most of the liquid egg has been shifted to the bottom.

    Carefully flip the omelette and cook for 20-30 seconds on the other side. The omelette most likely will not stay together when flipped, and that is normal; simply push it back together. Top with sliced scallions and serve immediately.
