Even if you’re in a rush, you can still enjoy this sweet and delicious sponge cake breakfast! If you want to serve your sponge cake with a little whipped cream, you can whip heavy cream and liquid stevia together in a stand mixer or food processor.

    Combine the butter and cream cheese together in a heat-safe container. Microwave the ingredients on high heat for 20 seconds until they’re melted. Stir the butter and cream cheese together into one mixture.

                            I am wondering the same thing… I logged the individual ingredients and it read 8 net carbs and 385 calories. Based on that, this does appear to be two servings.

                                Let’s face it, we all crave bready comfort food on this diet. I was looking for a quick fix, but this recipe surpassed my expectations. The cake has a nice light crumb and it’s quite fluffy. I substituted blackberries for blueberries, added a small amount of lemon zest and made a cream cheese icing for the topping. Sprinkle with a little cinnamon and enjoy. This recipe is a winner, I’ll come back to this recipe again and again.

                                        If you really want it to puff up, try a super hot oven! Like 400- 450 for a short amount of time (5-10min) so good.

                                        Hi I don’t have a microwave either I made it using almond flour and used two of the small soufflé type ceramic holders the ingredients filled both and I baked them at 160 fan for 20 mins and they have come out perfectly

                                        Delish! I made one mug with fresh blueberries and another with a fresh strawberry and it's perfect! I heated them together and for 3 minutes (90 seconds each). Came out just right. Not dry. Oh and I only added had the sweetener to each as 1 tbsp would be too much.
