Ingredients

  • Canned Tuna

    Canned Tuna

    2-½ ounce

  • Cheddar Cheese

    Cheddar Cheese

    2 tablespoon, grated

  • Mayo

    Mayo

    1 tablespoon

  • Zucchini

    Zucchini

    1 medium

  • Salt, Sea Salt

    Salt, Sea Salt

    ⅛ teaspoon

  • Black Pepper

    Black Pepper

    ⅛ teaspoon

  • Step 1

    Slice the tips from the zucchini and discard. Slice the zucchini in half lengthwise then slice a thin strip from each outer edge so that you have 2 thick 1/2 inch slices of zucchini.
  • Step 2

    Preheat a broiler to medium and arrange the zucchini strips under the broiler. Cook for 3-4 minutes until just tender all the way through.

    Whilst the zucchini is cooking, add the tuna, mayonnaise, salt and pepper to a mixing bowl. Mix together to combine.

    Divide the tuna mayo between the two cooked zucchini slices.

    Sprinkle the grated cheese over the tuna and return to the broiler.
    Step 5

    Broil until hot through and the cheese has melted.

    It was such a small amount of cheese and tuna, but more than enough. I placed the zucchini on top of a bed of shredded lettuce drizzled with some olive oil. Made a delicious lunch.

                I mixed a little Italian seasoning in the tuna and put a little Roma tomato topped with mozzarella cheese and it was amazing!!! Such a great idea.

                                      These where so tasty. I changed out the regular tuna for chipotle tuna added a nice zing to the recipe. Also add 1 oz of grated cheese as I love my cheese. Will make again.

                                            I enjoyed this recipe very much.. The making of the crepes, not so much! Lol I had to remake the crepes mixture because they kept calling apart. But the taste was there, I'll just have to make it again! 😂😂
