Keto Cauliflower and Halloumi Fritters
These delicious Keto fritters make a great breakfast, brunch or lunch option, loaded with fats and flavor. Our low carb fritters are prepared with cauliflower rice, shredded halloumi cheese, aromatic fresh thyme, and sweet red onion. The fritters are bound with egg and a tablespoon of tahini before being pan-fried until perfectly golden. These low carb fritters are ideal served hot with a hearty Keto salad or brunch topped with crispy bacon and sliced avocado.
Do I Have to Use the Tahini?
We have added tahini to our low carb fritter recipe for added flavor and fats. The tahini also works well as a binder and helps to bring the mixture together and hold its shape. If you would rather not use the tahini, your mixture will require an additional binding element such as more egg. Please be sure to adjust your macros to account for any changes made to the original recipe.
Can I Use a Different Cheese?
We have used shredded halloumi cheese for our Keto fritters. Halloumi is a firm-textured cheese that can be cooked to high temperatures without melting. If you would like to use an alternative cheese, you will need to swap for something that can also withstand a high cooking temperature. Queso blanco or paneer cheese would make good alternatives.

Halloumi by Pittas
3-½ ounce
Thyme, Fresh
2 teaspoon, chopped
Cauliflower Rice
1 cup
Garlic
1 clove
Red Onion

Lemon Peel Or Zest Raw

1 tablespoon

Step 1
Grate the halloumi into a mixing bowl. Finely dice the onion and crush the garlic. Add the onion and garlic to the mixing bowl along with the lemon zest, cauliflower rice, thyme leaves, and black pepper. The halloumi will be quite salty, but you may add a pinch more salt if you wish. Mix well to combine.Step 2
Crack the egg into the mixing bowl. Mix everything together well so that it is all evenly coated in the egg. The mixture should be slightly sticking together.Step 3
Add the tahini to the bowl. Mix everything together well to combine. The mixture should be holding its shape. Leave to stand for 10 minutes to firm a little.Step 4
Lightly oil a non-stick skillet. Heat the skillet over a medium/high heat. Form the halloumi mixture into 4 even-sized patties with your hands. Carefully lower the patties into the hot skillet. Leave to cook for 4-5 minutes on one side or until browned and firm enough to flip. Carefully turn the patties and cook on the second side for 4-5 minutes more. The patties should be golden brown all over and firm. Depending on the size of your skillet, you may need to cook these in two batches. Serve the fritters hot with your preferred Keto sides.
