  • Step 1

    Preheat an oven to 350 degrees. Spray a 6-ct muffin tray and arrange in each cup sliced turkey. Add in 3-4 pieces of diced swiss cheese as well.

    Whisk together the remaining ingredients in a bowl. Pour the egg mixture over each muffin cup, filling them about halfway.

    Bake the tray for approx. 15 minutes. The eggs will sink some during cooling, returning them to ‘muffin top’ size.

    I used an uncured smoked ham lunch meat instead of the turkey. They were very good and a nice option to make ahead for an easy breakfast during the week.

      I lined the muffin cups with a turkey slice with shredded swiss. Like the red pepper addiction. Easy peasey .
