    Preheat your oven to 375F/190C. Trim and discard the bottom of the asparagus stems. Chop the stems into 2-inch pieces and transfer them to a bowl. Add the mayonnaise and cheddar cheese. Set the bowl aside.

    Thinly slice the onion and mince the garlic. Add the butter to a pan and place it over medium heat. Add the onion and saute for 3-4 minutes until golden.

    Add the minced garlic and cook for 1 minute until fragrant. Add the cream, salt, pepper, and xanthan gum. Stir to incorporate.

    Cook the mixture for 2-3 minutes until thickened. Pour it into the bowl with the asparagus and other ingredients. Mix everything, and pour the mixture into a baking dish.

    Add the almond flour and parmesan cheese to a small bowl and mix. Sprinkle the mixture over the casserole. Transfer the baking dish to the oven.
