Keto Thanksgiving Asparagus Casserole

A creamy vegetable casserole is one of the most important Keto Thanksgiving sides. This recipe is rich, festive, and super delicious, a perfect part of your Keto Thanksgiving Menu. One portion of this side dish has just 3g of net carbs and will keep you satiated for a long time. Serve it alongside your preferred cooked protein for a nutritious and balanced meal.

What type of cheese is best for this recipe?

We used a mix of white cheddar and parmesan, but feel free to use the cheese you prefer. Aged cheddar, gruyere, gouda, mozzarella, or any melty cheese would work.

What main dish goes with this Keto casserole? This Keto asparagus side dish is the perfect accompaniment to any protein, including a juicy Thanksgiving turkey. You can also serve it on other holidays or a regular weeknight dinner with some steak.

How can you customize this dish?

Try seasoning this casserole with Cajun or Italian spice blends. You can also swap the asparagus for any other vegetable you prefer. Some great options include green beans, mushrooms, zucchini, cauliflower, and broccoli.

Can you adapt this recipe to a nut-free diet?

Absolutely! The only ingredient you need to swap out is almond flour. You can substitute it with sunflower seed flour, pork rind, or more parmesan cheese.

Can you omit the xanthan gum?

We don't recommend skipping the xanthan gum because it thickens the sauce in the casserole that carries all the rich and savory flavors. Omitting it will yield a runny sauce. If you don't have this ingredient, you can use arrowroot powder, but that will add more carbs to your portion.
