  • Step 1

    Make the Puttanesca sauce right away by melting the butter in a pan over low heat on the stove. Stir minced garlic and sliced anchovies into the butter and let them turn golden and fragrant - about 2 minutes.

    Stir in the diced tomatoes, chopped green olives, capers, and red pepper flakes. Cook over low heat for about 5 minutes.

    Stir the cream into the pan and simmer over low heat until you have a thickened sauce.

    Preheat an oven to 375 degrees. Lay 2, 5-oz chicken breasts in a glass baking dish lined with pan spray. Season the chicken with the salt, pepper, italian seasoning, and onion powder.

    Spoon equal amounts of Puttanesca sauce over each chicken breast. Cover the tray with foil and bake for 25 minutes. Pull the dish out of the oven and sprinkle about 2 TB of mozzarella on top of each chicken breast.

    Leave the dish uncovered and bake for an extra 15 minutes. Serve hot.

    Really good and the anchovies you could barley taste but all in all a fabulous meal!

      So satisfying, it's rich, a little salty and savory. I paired this with califlower mash and corn for my family members. Outstanding, simple. Next time I will add the anchovy which I did not have, and if added I don't think it would be too salty.

        This was amazing! I'm not a fan of anchovies but you can't even taste them. It mostly has an olive taste. Just delicious! Even the kids ate it 🙌

          I leave the anchovies out! This is one of my favorites! I can eat this meal 2-3 a week. Absolutely DELICIOUS!

            I’ve never cooked with anchovies before, but they are so healthy I’m going to give it a try. Do I need to cut them up before adding them to the sauce, or will they just naturally break up by themselves while they cook?

            I doubled the sauce so my bf could put over egg noodles and I put over cauliflower rice. Only added one 2 ounce can of Cento anchovies. It was amazing! Very mild like a DELICIOUS bisque. Great recipe. Highly recommend

                      Tried it today and an instant hit with all family members. I didn’t put any salt in the sauce. The capers and olive brought a lot of flavors to the dish.
